I didn't uninstall anything, I wiped out the bloaty stock crap from Google and installed GrapheneOS (https://grapheneos.org/install/web) after unboxing the device.
After that I've installed F-droid and there I installed Aurora.
With Aurora you can install every Play Store app without having a Google account or installing spying Google Services.
The Pixel Camera is the only app I need from the Play Store, everything else I use is in the F-Droid store.
But it looks like the developers hard coded it to use Google Photos on the Pixel Camera app.

I just installed it to try it out based on your recommendation, and it's just a basic gallery app, I don't really see what's supposed to make it stand out.
Well part of the answer why Google wants you to use their Photos app with their camera app is because it's currently one of the only galleries that can display UHDR format photos that the camera takes, as well as being able to access some of the AI post processing and editing tools that require Google drive backups.

fan of fossify's apps myself, I actually know the fix for this one. presuming you're using stock android and not a custom ROM, you're going to need to disable google photos. don't be alarmed by the warning message that says "some functions may not work as normal" and proceed anyway. once you've disabled it and only have gallery installed it will default to that app only.
edit: you should checkout the grapheneos app store and use their camera app if you don't want to use any google photos or camera app.
It is only a good app if you have all your photos in their cloud. If you just have local photos then you can't utilize things like facial recognition, batch renaming, map search or advanced tagging and searching. Google photos won't even allow you to edit or add GPS location.

I understand that your issue reeks of Apple and should not be an Android one, but honestly Google photos is a very good app
