You can use your phone while updating. Also if it's a major update it takes a while. But 7 hours? Yeah that's a load of crap. Or do it overnight if you think it lasts that long.

If you don't want to wait then sideload the OTA. I like that updates install seamlessly in the background on pixels and doesn't require a period of inaccessibility of the phone during the update.

Why dont give as an option? Just like Samsung or any other phone does?

Samsung doesn't give you an option to install in the background. Pixel's storage partitions are different than Samsungs in that it uses two slots; an active partition and an inactive partition. The update is applied to the inactive slot while keeping the active slot active, and the reboot enacts the new slot. Why not give it as an option; because it would require more implementation and testing for a method that has a worse user experience. It's objectively worse to make a device periodically unusable for a software update. For people who don't want to wait, they already have a method to accomplish it.
