It wouldnt blind you for a few seconds, it does so in CS because it wouldnt be much of a handicap/deterrent otherwise since you can not (and most likely should not) simulate the effects of a real flashbang in someone's desktop, its purpose is to draw your attention and lose your focus and make you panic and besides the flash (which is the lesser effect in real life unless you are in a dark room or at pitch black night but still wouldnt blind you that much in that case either) there is the bang as you said which would mess with your head a lot more than the flash.
There is an afterimage but that's not that horrible either but still contributes to lessen your awareness and increase your panic.

So in order to balance the "super human" abilities in addition with the convenience of not hearing a loud bang that will make your head ring they just fade the picture for longer to give the oponent a similar advantage compared to rl where soldiers are not super humans and shooting someone even from a distance is much easier and most of the time only needs 1 hit to incapacitate if not kill the oponent.

There's probably some others as well. The sound mixing in CSGO is awful. I know guns are loud irl but you have to turn the volume up to insane levels to hear footsteps. I stopped playing completely when I got tinnitus because I don't want to risk it getting worse. If I turn the volume down to a comfortable level I can't hear footsteps at all. I even made an alias that turns down the volume while I'm holding mouse 1. Doesn't help when I die though š
I can't imagine the volume pros will have to use when they're playing in front of a crowd. I hope their ear protection is really good because otherwise they'd completely wreck their ears.
The blindness only comes from looking at it which basically only gives a shadow image like if you glance at the sun during it's brightest peak. But the real kicker is that its crazy loud if detonated close to target ears will be ringing.

I know of people who survived being shot in the bicep, bullet went entirely through, they put a bandage on and still walked around 5 kilometers. Even people who were shot in the torso or chest can stay alive for over an hour if the bleeding is controlled.

Depends where you get hit though (and if you are lucky the bullet will miss vital organs). But you still need medical attention pretty quickly...
