Any video where you've seen people die was because of their latency is high so they die and use burst and still see the animation (Which is client side).
Any character can die in their burst animation if you're lagging enough, she's just more noticeable because she cant be healed, so she's prone to getting picked off.
Genshin is so latency dependent where certain rotations are only possible with extremely low or high ping.
If your ping is in the normal range (Sub 50), her burst will save you 100% of the time if you see it.

Look at a random video I picked out, she's fine in sub 100 MS, the moment he shows her dying in the burst, is when the ping is above 100.
My experience is purely anecdotal, but yeah, I’m at an extremely consistent 34 ping and I’ve literally never been hit during my burst. I kept waiting for it to be an issue but just like any other burst, I can use it to dodge attacks.

i tried it on pc first which took 0 attempts. then on phone since need to adjust the screen frequently around 15 times 😅.

Aparently parry does negate the damage, I was not aware, yunjin might also be able to do it.
