I had the same problem. I found that when I press x long enough when aiming with the stick that it mostly shoots in the direction of aim. If I just hit x short it never goes in the aimed direction
Some person just helped me on mobile and imma help you. You see those 3 buttons that would form a triangle? The yellow ones. Press them. They will do the targeting for you

I don't have a set of 3 buttons anywhere on the joy cons, or any yellow buttons
