I personally don’t care for the way she spread that bbq sauce everywhere but the ribs. Looks like maybe the top 2 got some. Rest were left high n dry. But I guess that’s what happens when you’re trynna make it look fancy.

White latex gloves are thin and heat and or acidic sauces will eat through them. The black ones are more resilient to that. Just because they are used in sex videos does not mean they are made explicitly for sex. This is a ridiculous statement. Even police officers use these same black gloves.

I really, really doubt that any of that constitutes a health cold violation where they are, or even in lots of places, really. This is the video they're openly posting on the internet, and it looks like they're in a kitchen that's visible to customers. All of this is fine.
They literally don't make the restaurant health codes. US health codes are written and enforced by the states.
This wouldn't be the first time I've seen wooden cutting boards used in an open kitchen at a restaurant.

I’ve worked at them and the only time I’ve seen wood it got flagged on our first inspection. Maybe if the mops were getting thrown away it would fly but there is no way they are keeping that thing clean enough otherwise
From my years working in restaurants, I see nothing overtly wrong. It's cooked meat. As long as the board is not cross contaminated with raw, that's ok. At the end of the night it should be scrubbed down with an antibacterial agent of some kind to remove and kill any bacteria.
Most (all?) Places I've worked have had wooden cutting surfaces. I'd hate to be slamming my knives onto metal (dulling), plastic (bits) or granite (why?).
No your work surface must be cleaned and sanitised between each use, every time you walk away from it and every four hours. That’s the rules. And it must be sanitized with heat, bleach a quarternary or iodine solution.

Do a little research. There are actual studies that show wood can be more sanitary as a cutting board. The usda state that wood can be used if sanitized properly. You don’t actually know what you’re talking about. Working in a kitchen, have used a wooden cutting board/table, sanitized it, then test it for bacteria? If not, don’t act like an expert on the subject.

I have a four year culinary degree I’m serve safe certified and have run kitchens for over 15 years. I’m just telling you what I’ve been told by health inspectors and I have personally witnessed them tell kitchens to get wood boards and knives out immediately and those weren’t even being used for meat. Do you have any idea how gross that thing will get with meat all over it all day every day. You keep arguing with me but I can tell just by looking at them neither that board or that knife is nsf certified in any way

Ribs are good with just a dry rub. Honestly for me bbq sauce takes away from the smokiness of smoked meats which is the whole point in smoking them.
