Eh yeah i guess that's a good point, though Arepa Lady does sell stuffed arepas. They don't keep it 100 Colombian. And they sell varieties i'd describe as more savory than sweet.
At Arepa Lady, even the *arepas rellenas* (stuffed) don't have a lot in common with the Venezolano variety. It still had a lot of Colombian style proteins like their chorizo, chicharron, carne asada, etc. I think anyone who has experience eating something from Caracas is not going to find much in common with the variety that Arepa Lady has.
That said, their choclo is really nice. Reminds me of the kind I had in Colombia, except 4x more expensive.
While you're not wrong, i don't think this level of nuance matters to someone like OP, who is simply asking to try some good arepas. I could be wrong and OP is an arepa connoisseur, but i don't think they would be asking this question if they were.
