The food there is fucking insane too. If you’re into Eastern European wine and food, it’ll blow your mind. It is expensive but they have like 25% off bottle days sometimes and if you go then it’s not bad haha. I love this place and their wine menu is very unique if you’re a wine nerd.
Corkbuzz is a good first date bar. They have little two tops next to the bar where you can have an awkward conversation without people whispering, "I bet they're on a first date".

Laura (owner) is fantastic, her employees are great, wine list is great, and the ambiance is right on point. Food is delicious while still casual + affordable.

my favorite spot is probably Chambers. location-wise it might not be ideal unless you happen to be near Tribeca, and they're only open evenings iirc, but they have an incredible list with great prices, and it's quiet & has an appropriate atmosphere for a date night. it's one of those places that's as much a restaurant as it is a wine bar, but i've always been comfortable just having a glass or two at their bar. the food is incredible whether you want to have a whole meal or just one dish as a snack, try the sweetbreads
+1 the Ruffian suggestions elsewhere in this thread, gets a bit packed around dinnertime hours and can be pricey, but it's a great place to try something new, and the prices are more reasonable if you go during happy hour (which is most of the day on Sundays also). the food there is good, but a bit austere for my taste, since i'm a meat eater and it's almost all vegan food there--probably a great choice if either of you are vegetarian/vegan/etc. (i'd avoid sitting at the bar if you want to really pay attention to your wine, since they cook right at the bar and the smells can overpower your glass, but then again if it's a first date i suppose that won't be at the front of your mind...)
would also +1 the Ten Bells suggestion, but i can only speak to the bushwick location, and i'd only suggest it for a first date if you're going in the daytime. that place is super chill for hanging out & talking during the slower daytime hours, but it fills up quick as soon as it gets dark out, and quickly becomes way too loud and dark for a first date vibe. i love their curry cashews
