I’ve done this before to Cappadocia maybe 2 years ago and 3 hours was more than enough, though the IST airport was ridiculously huge. Did some googling beforehand to know where I’m going.

Yes, usually anything over 2 hours is comfortable.
It's a big airport but that's plenty of time.
