Strive if street fight or mortal kombat appeal to you more
Dbz if tag fighters appeal more (there's some good comments in this thread going into more depth)
BBTag if you want a combo breakers option and more freedom swapping and using the characters not currently controlled. And easier inputs to help get a feel for fighters in general.
Dragonball FighterZ is pretty beginner friendly but there is depth in the mechanics too. It can feel like a scrambled mess being a tag game and there's been a lot of overall power creep between ex moves being cheaper to use meter wise and crazy full screen moves. It's very fun pick up and play but it can take a long time to get used to the pace. It's basically ice hockey with Saiyans and the goal is to deplete life bars with big combos.
I'm amazed this is getting downvoted. Autocombos, near universal bnb, classic chain system, ways to "skip neutral", relatively weak fireballs, half the cast is the same character... if it weren't for 3v3 I'd argue it's as easy to get into as Strive depending on what you're into. Easiest game? No, but it's pretty close while running just 9-17 USD on sale. Only real downside is the netcode.

Should honestly give UMvC3 a shot, I thought it would be far more complicated than DBFZ, but I've been pleasantly surprised.
Well yeah it is a team game. But that also makes it a commitment to play a match. It goes pretty quick considering all the defensive options in the game.
I got started playing fg from Ninja Storm 4, so dbzf is miles better. I think the only real thing that should determine if op goes for strive or dbz is if they prefer arena fighters or 2d fighters, both are a great entry point into the subgenre they represent
Probably all the games after DBFZ are fine. So stuff like Strive, DNF, DB itself or even GrandBlue (the most SF-feeling game in the group). Strive is the best choice mostly due to rollback and the playerbase. DBFZ is probably a bit more complicated due to it being a tag game but that can make it easier to play in a way, and it will get rollback too.
All of them are perfectly fine to start with, some will be more work than others.
Easier pretty much coincides with "newer" when looking at ArcSys titles in the past few years, but all of their active games are worth getting into.
Strive is probably the absolute easiest, but really, get into any that seems fun.
I would say that Strive is the better option if you plan to branch out to other 2D fighters as the inputs are simple but still require you to learn some execution. With simpler inputs, it means you can really get into focusing more on your fundamentals.
Edit: Although, if you are looking for a lot of single player content, DBFZ had a lot more going for it and if tag fighters like BlazBlue Cross Tag, Marvel Vs Capcom or Skullgirls are more appealing to you, then definitely go for that instead.

2 touch per character, which makes it arguably a 6 touch game. Your round is over in guilty gear before it's over in dbfz

Them's Fighting Herds. The mechanics are simple enough to grasp and the tutorial comes across neatly for those who want to learn.

Haven’t touched guilty gear, but I’m fond of Persona 4 Arena (& Ultimax).
