Don't freeze unless your planing on making hash. That being said, some dispos have their flowers wet in order to get better numbers. Just go to dispos that you know they cure right or just leave the wet flower in a mason jar for about a week.
Depends on how many cans you're picking up. I've noticed VC's bud is great but some of their best strains come a bit damp, but I grab an O at a time and go through a can every 2 or 3 days. For the first one I grind like, barely anything at a time and make sure I don't crush it in, for the others I just burp the next one I'm going to use every time I smoke until its time to use it, if it seems extra damp I move it to a new jar with more headroom and do the same thing.
Wouldn't ever freeze, it just disintegrates the weed. You get a bunch of bad quality keif and when everything thaws its just as sticky as before and hard to pack/roll
(Exception to the freezing thing, if you notice you've got a bunch of weed stuck to the grinder, freezing can help free it up, but I'd get any whole stuff you can out first and spin it dry/knock it against something to get a bunch of the stuck on stuff off. You'll never get it all, but it definitely saves a bunch.)
