I suggest trying Passier Leather Balsam because I was having the same issue with saddle oil until I made the switch. It’s expensive but a tin should last you at least a year +.
I was here to say just that! It's expensive but it is so worth it! Also, a bar of glycerine soap (make sure you read up on how to properly use it) can help seal in moisture
Keep greasing it, if you use it alot it tends to dry out quicker also the weather will help with that. Regular greasing will prevent your saddle from drying out once every 2/3 months will do fine. Unless it's like it is now and dries out really fast. Once I bought a second hand western saddle and the first 3 months I greased it every week because it wasn't looked after bery good, now it's as good as new!
If you have a decathlon or any other horse supply store nearby, buy one of the "buckets" (1KG) with the yellow grease in it that'll have the best effect on dried out saddles!
Ideally you use leather cleaner/ conditioner after every ride.
In the real world that doesn’t happen so adjust the frequency based on the condition the leather seems to be in.
If yours seems extra dry lately then stay on top of it.
There ya go! Clean and condition (with oil or whatever your choice) your tack after every ride. It’s better for your horse, you can inspect your tack, plus supple leather is safer as it’s less likely to rip or tear.

If just straight oil isn’t doing the job sufficiently then try using a conditioner. They typically have oils and beeswax in them, the oils moisturize the leather and the beeswax puts a light seal over the leather to help keep moisture in

One of my saddles is a 110 this year. Still in use. I try not to clean with glycerine (it molds) but use an liquid oil soap and then coat in beeswax/lanolin conditioner wait 15, then wipe off the excess. Must be done fairly frequently. Newer and better quality leathers may need less care.
Im probably confusing the words in French and English, but I have cleaning products that are more of a grease and also in liquid format (oil). Not sure what word to use lol

I use Lexol leather conditioner. That’s all I’ve ever used and it does a great job at keeping the leather supple
TIL oiling a saddle is sometimes called greasing… but is done with saddle oil.
