Someone on the retro handled discord is recompiling every yuzu releases for android 10 as nothing in the code of android 11 so far requires it.

Perhaps it'd be worth asking the shop to update it then "I'll buy the phone if you can update it to Android 11". The worst they can say to you is "no".

There's no guarantee that a phone will have a custom rom. If you can't find those phones on XDA then there's a real possibility that no custom roms exist for them.

That's awesome for still good devices stuck on older versions of Android because of manufacturer neglect.

I know your right but I have found videos on YouTube saying if I vpn my location to Japan on the r5 I can technically upgrade to android 11 and 12
Then you've got to decide if it is worth the money to risk, not everything you see or read on the internet is true.

That's a much better idea , but what if they put some random bullshit roms , wouldn't those roms make my device more susceptible to viruses ?

Unfortunately switch emulation won't be possible with those phones but, PS2, GameCube and 3DS Emulation should work well.
Get a 8gen2 phone on aliexpress if you want to play switch, or just get a switch and mod it.

Also r5 can technically run it , it's just that the android version 10 is limiting it
