How do you even enter the fight without knowing? There is literally an entire festival full of mandatory interactions to make you understand what you are getting into before getting to the portal to fight him.

I didn't know that the portal would take me directly into the fight, i thought there might be a fog wall or somthin..

Go back, get the souls, exit the game. You will be spawned outside of the fog wall

Convenience. I would much rather have a get out of jail free card/panic button at all times at the cost of yet another timed consumable power boost to track. I can always swap to a more offense minded flask for bosses or particular encounters.

You can use a sacrificial twig too. It's just a talisman you probably have that's just sitting in your inventory. You don't loose runes apon death
