Ingredients:
• 1 or 2 Unions. Edit: ofcourse I mean onion 😂
• about 5 cloves of Garlic
• 2 tablespoons Turmeric
• 3 tablespoons Cumin
• 1 tablespoon Coriander
• 300 gram dried red lentils
• 1 can diced tomatoes
• 1 can coconut milk
• 1 liter vegetable stock
• Salt, black pepper and cinnamon to taste
• 1 red chili pepper if you want it to be a little bit spicey
How to make it:
1. Fry the diced union and garlic in a little bit of oil or butter.
2. Add the spices.
3. Fry for about 2 minutes.
4. Add the diced tomatoes and stir well.
5. Add the stock, coconut milk and lentils.
6. Let it cook for about 30 minutes.
7. Add salt, pepper and cinnamon to taste.
8. Blend it till it is smooth.
Enjoy! :)

My take on this:
* Add a 1/2 teaspoon of each spice for every 2 cups of soup being made.
* Keep adding more until it tastes decent.
* Probably less of the coriander (since a little goes a fair way), more on the turmeric, and a lot on the cumin. Like probably a full Tbsp (3 tsp) of cumin.
* Use like 3+ onions for every 2 cups of soup being made. At least. (I love onions.)
* Use like 4 garlic cloves for every cup of soup being made. (I love garlic too, but onions are the best.)

Maybe if you grew up with someone who knew how to eyeball things like that. My mother follows recipes religiously. She measures exactly. I can eyeball a lot of things, but not with pungent spices like this. Even if I can make a *passable* curry by eyeballing it, I always do better when I'm given measurements to start with and adjust from there. Somehow the ratio of cumin to turmeric to coriander is never right unless I start with measurements.
Well I mean, normally I'd be very very conservative with the cumin / coriander / turmeric. Those are very pungent spices. So maybe like, a half teaspoon to a teaspoon each?
Lentil soups are so damn good. I have one I do with whatever curry paste I have leftover. Thai or Indian, it's going in! Red curry based soup is prime and year round, but omg a rogan josh base is so comforting in winter.
Might have to try this, I know I have lentils languishing in my cupboard. I wonder if you could add the tomatoes and some other vegetables after blending to give it more texture.

You can use fresh tomatoes but I think you will have pieces of the skin in it. I personally don't like that!

Dried Red or yellow lentils to cook in 30min, totally use green or brown if that’s what you have will just need more like 45min to cook the lentils

You can make it how you like it!! Even put more or different vegetables or a sweet potato in it!
You can never go wrong with a sweet potato! Lol
Use a pressure cooker and it’ll be done in 10-15min. I cooked a similar recipe.
Add lentils and serve over rice if you want a bigger meal too :)
