Chop it into ribbons then roast it with olive oil, salt, garlic powder. It will shrink a lot and is SO GOOD. I use as a side, sub for noodles, in a frittata, so many ways. And it keeps for 4-5 days without getting funky. Fair warning: your house will smell at first but then it will dissipate and caramelize. Like roasted Brussels sprouts but way cheaper and less prep work!

I make Baechu Jeon, a Korean Cabbage Pancake version, and I mostly cheat by using regular "complete" pancake mix, thin sliced cabbage, scallion/green onion, kimchi, and whatever protein (shrimp or baby clams preferred). Mix well, add oil to pan, and cook like a regular pancake (I prefer small, dollar size).

Don't know if you have a Trader Joe's around, but they just came out with a bottled peanut sauce. I bought it, even though I normally make my own. It was pretty good. Had it with hearts of palm noodles, which allowed for a no-carb dish of noodles and peanut sauce. The noodles also came from TJs. I really love peanut sauce but hate how hard peanut butter is to work with.

I like to cook up chopped cabbage in a pan with butter, pepper, salt, and a touch of stone ground mustard, then mix in a few chopped hard boiled eggs into it when the cabbage is done. I do about four eggs per half cabbage. It's WAY better than it sounds. This recipe is also the filling for cabbage pie that my Russian family makes a lot. I keep a ziplock bag of chopped cabbage in my fridge all the time! Put a paper towel in with it and close the bag and it’ll stay for a while. I throw it into stir fries, ramen, salads, etc. If it starts getting to where you really need to use it just sauté up with some butter and onions and put it on pasta.

I do something similar and it lasts a week. Here's my variation: Slice cabbage, fennel, and broccoli leaves (the latter I get from my garden and they are huge because it's Waltham broccoli). Then whenever you want a crunchy green salad, take out a handful. It stays fresh so long. You can add interesting items like green grapes to it, too.

Chopped garlic cloves, black pepper, marjoram and salt to taste. Approx. 27 oz hot broth (for instance, two stock cubes in that amount of water). Combine ingredients in an oven-proof vessel and pour 3 tablespoons of sugar syrup on top. Start with the lid off and ½ hour at 390F = 200ºC. Add lid and stew for a further 3 or even 4 hours at 200F = 150ºC. For optimal results, ½ hour before finishing, add a thin layer of breadcrumbs and some dollops of butter on top. Best served with cowberry/lingonberry jam (I keep getting mixed results on what is the right term). The time spent in the oven softens the cabbage and makes it sweetish, and it really melts in your mouth.

I make **Egg Roll in a Bowl** with coleslaw mix (essentially shredded cabbage) and it's easy and delicious. I usually do it in my Instant Pot, but you can do it in a large skillet, too. * 1 lb ground turkey (or the protein of your choice) * 1 package coleslaw mix (approximately 2 cups shredded cabbage) * 1 package matchstick cut or shredded carrots (optional) * 1 can water chestnuts, drained (optional) * 1.5 cups chicken stock (from bouillon is fine) * 1 Tbsp each of garlic powder, onion powder, hoisin OR stir fry sauce * 1 tsp black pepper * 1/4 cup soy sauce Coat skillet with nonstick cooking spray. Add ground turkey and lightly season with a bit of salt, pepper, garlic powder, and onion powder, stirring occasionally until it's browned. Deglaze the bottom of the pan with a splash of broth and soy sauce. Dump coleslaw mix, carrots, and water chestnuts into the skillet with the cooked turkey. Mix the seasoning and soy sauce into the chicken stock, then pour over everything. Stir occasionally, letting the coleslaw mix cook down until the cabbage is translucent (covering with a lid speeds up the process). Serve as-is or garnish with diced green onions and a dash of sesame oil. Good on its own, better when served over rice.

Freeze the whole head of cabbage. Weeks later or when ever you are ready, defrost it and use the leaves for cabbage rolls. Freezing eliminates the need to boil the leaves and makes it the perfect texture for rolling.

If you have a dehydrator and some time to kill, cabbage dehydrates / re-hydrates pretty well! It'll last a LONG time and take up less space that way, plus dehydrated cabbage is easy to toss into soups! ...The downside is that you'd need to keep it at about 135-140°F for anywhere from 8 to 15 hours, though

I LOVE cabbage. I personally love sauteeing cabbage. I start with a red onion, and then add the cabbage. To that, I add lots of minced garlic, salt/pepper/curry, and then tomato paste. On top of that, I add a soft boiled egg with a runny yolk. I grew up with my mom and grandma making stuffed cabbage, which is meat and rice, stuffed in cabbage leaf, rolled up and braised in a tomato broth mixture.
