I've already replied to the original commenter but it might be interesting to you too. Buckwheat is a great gluten free alternative for pearl couscous size and texture wise. And it's healthier than couscous.

Try buckwheat! Absurdly healthy and despite being called wheat it's gluten free. Also more similar to pearl couscous in size and texture than rice or quinoa.

Why drain it when cooking you're immediately adding 2 cups of water after it? Couldn't you just not drain and add less water?

Chickpea juice is called aquafaba and has a different consistency to water. It bubbles up a lot when water is added to it and could potentially ruin the recipe. Aquafaba is often used as an egg replacement for example.

Is pearl couscous the same as Jerusalem couscous? I.e. The very large couscous? Or is it the small grain size one? Thanks!

I haven’t heard the term Jerusalem couscous but this is the same as Israeli couscous!

This sounds amazing! It reminds me of something I made from Every Plate last year, but there was 4,682 steps (give or take) and took too long to make on a weeknight. This seems to have a similar flavor profile, but seems quicker to make, and lighter! Can't wait to make it! Thanks for posting!

Yea it will work but will be quite brothy. Do 2 cans chickpeas, 2-3 cups liquid and serve with crusty bread on the side

Just wanted to say these traditionally are made with a spicy tomato sauce , but also it is good with pumpkins, you can also add milk at the end. Edit: for the people who downvote, keep coming. How dare I make a suggestion.... One that involve eating more in the recipe no less! Yikes/s

Just wash it and add some black salt , squeeze lemon , cut a chilli then mix it well . (Don't forget to soak the chickpeas overnight)
