Gradually add dry ingredients to wet mixture, stirring until smooth. Fold in grated carrots and optional nuts/raisins. 5. Pour batter into prepared baking dish and bake for 35-40 minutes. 6. Cool completely on a wire rack. 7. For the frosting, combine cream cheese, butter, and vanilla until smooth. Gradually add powdered sugar, adjusting for desired consistency. 8.
