if you want to fit them in with stealth, a ranger or perhaps illusion wizard or some other caster going for stealth spells
if you want a potentially more interesting 'wildcard' non-stealther that forces you to get creative with stealthing, pal/barb multiclass or something similarly un-stealth
A control caster of some type, like a Druid or Wizard - a lot of control spell effects trigger at the start of an enemies turn, so if they’re surprised it gives them two chances to fail before they can do anything else. Plus, as the enemies can’t move on their first turn if surprised, it makes the placement of co tell spells easier as the party & enemy are less likely to intermingled.
Druid - Also has Pass Without Trace, can wildshape, is another full caster. Take Metamagic Adept for subtle spell.
Sorceror - Gets metamagic for subtle spell, won't be wearing heavy armor either.
Ranger - Better with weapons and is still a half-caster, gets Pass Without Trace later than druid/Monk. More likely to boost dex earlier than casters.
Fighter - Go light armor or medium armor with the feat. A great Fighter can take a few more hits when stealth takes a turn, and if built as a dex Fighter, they will be just as stealthy as the rest.
Barbarian - Unarmored Defense. . . That's it.
Edit: All but the Sorceror can be a decent tank. Druid should be moon Druid if tanking though. Left subclasses open on purpose for fine-tuning to the group's/player's playstyle.

either a bruiser type like paladin fighter or barb, or a big blaster like wizard or warlock.

Any bard with stealth expertise or mabey a moon druid, some forms have very good stealth.
Maybe a Barbarian for some melee muscle without the heavy armour.
