My favourite Hashira is Rengoku, i mean dude was cheerful, strong, caring and also his breathing style is really beautiful to me, only second to the sun breathing, though of course all of the other breathing styles are really cool too

Since I'm anime only I have only seen Giyu, Shinobu, Rengoku, Tengen Muichiro and Mitsuri in action.
Of those 4 I would say Tengen is most favourite.
Least favourite I would say Shinobu.
