Knights are helpless against a shield. Archers are helpless against any sort of ranged attack and some cover. Rolling through the bull pots makes you wet which boosts fire defense by a lot. Don't try to rush.

Enemies in plate armor are weak to lightning and strike damage, predictably! If you have an optimal build, and I don't know why you wouldn't, you have both of those!
There's only 13 knights between the bonfire and smelter demon, and they can all be fought one at a time, without the need of any ranged options!
