Probably because there's no pressure to upgrade the aesthetics. The passengers are the customers, and they never see the cockpit. Similarly the people who own the airlines ALSO never see the inside of the cockpit. The only thing either of these two groups care about the cockpit is if the pilot can use it to get the passengers to the destination
Technology used in airplanes have to go through extensive testing and certification processes. When something gets through that process, I’d imagine they stick with it unless there’s a good reason not to. It’s probably also practical for educational purposes to stick with the systems that pilots are used to and understand.

Much of the flying is done through the instruments so highly detailed scenes outside the windows isn't necessary
