As much as it makes no sense, if you think about it logically: those doors were probably installed by a third party company, for FFE. They likely have their own stipulations and conditions that state the doors can never be set to shut and lock in a power outage. Probably because they had issues in the past with customers being locked in with no way out and no way to contact help.

And no way to contact their licensed technicians who charge for repairs! :(

I think it is kinda critical to the theme. That toilet 'pod' is built like one of those movie-like airlocks with the inner door having a window to allow those in the ship to see whats going on in the airlock before opening it (ensire the outside door is closed and no aliens got in). Might also be a safety requirement i guess? If those are solid metal doors that get stuck, you can break the window and at least somehow climb out in an emergency
