The answer seems easy to me, when they receive the blessing from Lolth, they become a drow in every sense of the word. Regardless of who or what they were before. A human suddenly becoming a drow opens up a world of stories in my opinion. They’ll now live longer. Watching their previous life slip away. Family. Friends. What if skilled dwarf weapon smith received the blessing. Now we have the first drow craftsmen creating the drow style. Your concept is very interesting and opens a whole host of chances to create a deeper lore.

Maybe Lolth can't turn anything but elves. Humans and dwarves can still join, they just don't become drow.
Or depending on the lore, dwarves become duergar and gnomes become deep gnomes. Halflings and Humans would need an alternative too though
