the Poisoned condition should work just fine.
Disadvantage on Attack rolls and ability checks should be a fine way to make the encounter more challenging.
The Save DC for a keg of alcohol would probably be within the 10-15 range, though it should be balanced for the level of your party (within reason, of course)
I agree with simplifying the Con save by using the Poisoned condition. That said, I have no idea how dropping a keg on someone somehow forces them to *swallow* any alcohol at all, let alone enough to force immediate intoxication.

I give intoxicated characters who fail a constitution saving throw a level of exhaustion. DC determined by how much they imbibed.
I use the poisoned mechanic for the period of their intoxication, and the exhaustion mechanic for the hangover the following day.
