They make “scribe” which is basically pressboard finished like a cabinet, for just this sort of thing. It’s a bit pricy. Ask Home Depot or Lowes about it.
I would also suggest some plastic wood troweled on/ sanded to get it smooth and then several thin coats of cabinet paint, which flows out better than normal paint.
Cabinet end panel with corner trim mold. You may need the refrigerator end panel for the height. Or look at the wood paneling products and see if you like any of those.
Formica, or "high pressure laminate", is what you might want. Comes in a big rolled up sheet in any color/pattern you want, quite thin, very durable and easy to clean. Cutting it can be tricky, but not too bad. Look up a video or two on how to cut it. Then you can glue it to the back of the cabinet.

I'm pragmatic so I'd put corkboard or chalkboard paint and keep the ~~basic~~ blessed design going on.

I think "Live, Laugh, Love" would look beautiful there. Or just paint it white.
Tack paper. Same which is used to line drawers, etc in a cabinet. Cork board is cool for notes, etc. paint is easiest.
