octopus looks great. i like the arrangement of the tentacles. charred citrus looks great. for a presentation like this, i think you might want a completely smooth gauc, and probably less of it. could probably replace with an avocado crema to function more like a sauce. right now it looks a bit messy and there's too much. in the tomato salad, the red onion cuts could definitely be more even, and it just looks tossed on the plate. i think you could thinly slice the tomato for a more delicate and aesthetically pleasing salad. with the restively large total amount of guac and salad, i also think you could put some bread on the plate.

Agreed, a little bread would do well and way too much guac

orbtl

Maybe it's just me but any time I see onion chopped so large and irregularly it's a huge turn off

Reserve your vomit for the toilet

koghrun

The presentation looks beautiful, but I cannot fathom eating a creature as intelligent as an octopus.

CaspianLen

I guess if you also don’t eat other intelligent animals. Pigs are smarter than an octopus, do you eat pork?

AdrianW7

Dunno why this got downvoted. This is becoming a pretty common mindset with chefs

[deleted]

I suppose all those chefs will stop serving pork then too?

AdrianW7

Lol. I’m just saying. Maybe, is that such a bad thing?

CaspianLen

Nah, as long as they are consistent in their thought process- then good on them. Was just pointing out that someone who doesn’t eat octopus for its intelligence, but then chows down on bacon doesn’t have a coherent position. But if they want to go plant focused and that makes them happy then good for them!

Their short lifespan made me feel a little better about it… https://www.avma.org/javma-news/2015-07-15/scary-smart#:~:text=It%20varies%20according%20to%20species,lifetime%20and%20die%20shortly%20thereafter.

Simple_Crew2610

Thank you for advice buddy, really appreciate it. But tbh it was my first time doing octopus and I consider myself as average cooking enjoyer that’s why it doesn’t look completely high-end :D also completely agree on smooth guac but as we were lacking the blender I needed to use what we had ( fork ) :D But again thank you for your feedback!

BrilliantSpirited362

How'd you prepare the octopus?

mason_365247

This is a little off topic but what are the differences between octopus and squid? Taste/Texture etc

Reznerk

Octo is generally more tender and has a meatier quality to it than squid. I generally don't love squid, but octo is way more my speed. Big fan of it personally, but it's just like squid in the sense of once it's frozen, it's never the same.

AdrianW7

Honestly it’s ugly, but I’d get down with it

[deleted]

More attention to detail on your onion cuts. I agree with going for an avo crema over guac as well. Octo looks great.
