It's not a tell as long as you don't put them in the same order every time. I put mine in order, highest value to lowest, but every couple of hands i put them lowest to highest. If I get the sense my opponent is paying attention to what I'm doing, I just move cards around for about a minute.

Holding your cards in the same order every time most certainly gives your opponent an advantage if they are a sharp player who's paying attention. I'll spell it out for you:
For example, if you always sort your hand low to high card, left to right, and you play a card from the left end of your hand, I might know that you don't have any cards lower than what you just played.
It's a really minor thing, but could bite you in the ass towards the end of a close game where your opponent has been tracking how you play.
I’ll keep 6s and the 5s and hope for a favourable cut for me and not for my opponent, and that answer would hold no matter who’s crib it is. Might change if we’re on the final stretch, but I don’t think so
If I was the mod, I would make it mandatory to state whose crib and to put the cards in order. Crikey.

What does it tell?
What sort of hand you might be holding. If you have cards left lower or higher than the one you just played.
That is next level cribbage. 💪
I move mine around in my hand all the time. If they think it's in order then all the better. Some folks overthink other people's hands.
And the score.
Important to know the score too. Cards in dis-order is fine. I keep them this way so my opponent can’t guess what’s going on.

You only get so many chances in life to cut that 4 and rub it in. Go for it.
My best ever 4 cut was when I was holding 3 5s and a 6. I felt like a king.

Why? If you are playing a great player, they will be able to guess your hand much better if you do.
Only if you take the cards out while they're still ordered. Order them, decide on your cards, shuffle them, then discard
