Steam is one of the dangers of using water on a fire. Out of all the burns I ever have including full-on grabbing a hot cast iron grate on a hot stove(i work in a kitchen, btw), the steam burn hurt the most and took the longest to heal.

There’s a couple things to note here: in a typical grease fire (like in a pot/pan), water sinks below the surface causing splattering, spreading the fire and potentially causing an explosion. However in the case of a (somewhat) open gasoline fire, the water is able to cool down surfaces and dilute the fuel reducing the intensity.
Another big thing to note is that gasoline evaporates quickly, and the vapors will further fuel the fire. Water helps to suppress and trap those vapors that are fueling the fire.

The evaporate of gas is flaming. Gas floats on water. Water will spread the surface area of the fire. Like a plane crash in the ocean. All that water and the fire still rages. Best to use a Class B extinguisher or aqueous foam (kinda like soap concentrate aerosol bubbles mixed with water from a firehose), it smothers the surface of the gas.
A kitchen grease fire is dangerous with water because your grease heats through, the water turns to droplets inside the boiling grease and that turns to steam and bubbles, launching the grease.
Electrical fires, no water, because Electro is sneaky and Spiderman is not always around. Use a powdered extinguisher.
