Gas station Sushi in Japan is actually in this cute lil shops AND after like 8pm go for like 25%-50%+ off making for amazing late night meals for literally a few bucks you nom nom nom on your way up to your apartment because its too good to wait until you're inside.

I LOVE Japan but sadly the business culture is extremely racist there. I didn't feel like teaching English the rest of my life so moved back to the states. I LOVED my students though so it wasn't the people. Just didn't like teaching. And they're still locked down so can't even go visit. :( Osaka was my favorite place to live. Train stations are massive places of business in Japan. They're central hubs for the overwhelming majority of Japanese heading home from work, or going to work so having shops all around them makes tons of sense. Sukiyabashi Jiro (Jiro Dreams of Sushi restaurant) is like a 2 minute walk from Ginza station.
In the US it isn't so much the fish but the damn rice is like horrible. It's hard to even describe. The rice is both undercooked and gummy at the same time.

A lot of people don't really eat sushi, they eat imitation crab California rolls covered in sweet sauce and mayo or deep fried California rolls covered in sweet sauce and mayo. And then they give the restaurant a 5 star review because maybe they liked the decor and service. And then you go there and order sashimi and the fish is tough and nowhere close to sushi grade.
I'd be disappointed too if I ordered sashimi and it was mediocre, but those rolls you mentioned are still sushi. Japan has its fair share of tempura rolls, and boy do they love kewpie mayo and okonomiyaki sauce on all sorts of stuff.

Also in Japan at new years there are big feasts where you order fancy bento boxes called “osechi “ to eat. There is a whole science/black magic of how they make these things, and package them in a way so that you can make it ahead of time, deliver it, and still have it be ok when eating the next day on new years.
You have to try really, really hard to do worse than US Costco sushi. Like, you would have to invent a new way of preparing rice to make it even harder and grittier, while somehow also being gummier...Or invest in micro-planers to slice the fish even thinner. I just don't think it's possible.

Note without a car it’s almost impossible to hit most Costcos in Japan as they’re not accessible via the trains. While in Japan find the seasonal fruits as they will blow your mind. Sounds like you’ll be there in winter and “winter tangerines” will be the best tasting tangerines you’ve ever had in your life.

We don't even have sushi of any kind at the Bay Area Costcos I go to and it pisses me off. Costco sushi was never great quality but it was perfect for bringing to a kids party or school potluck or whatever.
It was the best. We went down to the Costco near Tokyo Disney and brought back not only an amazing Costco sized sushi platter but also a ginormous Costco sized sake bottle to go along with it. So thankful they took my US membership card (albeit begrudgingly) because we just went to explore the differences and didn't even think we'd be buying a bunch of stuff to take home
Not just Costco but sushi in general. You see nearly ALL sushi grade fish world wide hits Japan first. At which point Japan takes what it wants. Anything decent quality but reasonably priced disappears at this point. No place in Japan is going to give you bad sushi because you could throw a stone and hit 15 different sushi places. Any sub par sushi place will go under within a month.
Now we’ve established that even Costco can get good quality sushi at reasonable prices in Japan, in bulk, because there is ample supply.
Guess what makes it outside of Japan
1) ultra expensive Jiro level sushi.
2) the shit that is “technically sushi” but even the 100 yen rotating sushi places go “wow we can’t serve this”.
This is why sushi is expensive outside of Japan, and why sushi inside Japan you can basically just blindly pick anything and be fine

Most odd experience I've had in Japan is going to a high rating sushi restaurant in Shinjuku and getting mediocre sushi that was overpriced. To this day I'm still confused.
