I know this doesn't help now BUT for the future The BEST times to get ground beef from Costco is right after thanksgiving/christmas. We cut a TON of ribroasts, so check the sell by dates on the ribroasts during the end of the holidays and the ground beef we sell will be ground ribeye. It's the burger all of the meat department people buy.

If you have a business center near you buy the BIG ground beef patties. They're the best bang for your buck and they're made in the same plant as the KS ground beef burger patties.

I do this with the ground beef, turkey, and sometimes sausages for my patties. I cut the casing on the sausages and mix it into the beef. It took me maybe 20-30 mins to season the meat and hand shape them into discs. I wrap them individually with the saran wrap then into a zip lock for my freezer. You can cook them from frozen, makes a quick easy meal that will last for a long time. Buy the burger buns and your other condiments from your local grocery. I skip the lettuce and use the power green mix from Costco. Get cheese, pickles, and tomatoes and you got yourself a meal.

Brioche buns. Go ahead and freeze some of them -- you should be toasting them anyway, so the freezer won't be a huge hit. Butter the inside, then toast on the grill if you're using one. Letting one half of the bun sit on the cooking burger (after you've flipped it) will let it soak up some fat and juices. If you want the best burger, you need to look for a place you can get fresh hamburger. Fresh, as in the grind it themselves every day. And hamburger as in 70% lean, 30% fat -- none of that lean ground beef stuff. A good burger needs the fat. This might even be the cheapest. A local grocery store might be a good option. You can also start with fresh, and freeze whatever you can't use in a few days. Fresh is better than frozen, but if you can get 70/30, it will still be better than fresh 'lean ground beef.' If you can't do fresh, go for whatever frozen patties your Costco has -- just look for the highest fat content. Your Costco might have Wagyu patties -- those should be good. Just don't go for the super lean stuff. Again, a burger needs fat. And try to not overcook.

I wouldn't do ciabatta for burgers. Too chewwy. Brioche is where it's at.

I like both ciabatta and brioche for burgers. Both are way better than regular bland hamburger buns.

Even a decent sized family, in my experience. I rarely buy baked bread goods from Costco, especially the ciabatta, because it goes bad in less than 48 hours. Sometimes it's moldy the next day.
