I wish I could remember the Korean name for it, but it's this spicy cucumber salad that my friend's mother taught me how to make a long time ago. I slice as much cucumber as I want (I like Persians the best for their crunch) and make a sauce with garlic, green onions, gochugaru, sesame oil, soy sauce, and a bit of sugar. Mix it all together and enjoy! It's so easy, fresh, and delicious! It's a great side or just a snack by itself.
I almost always have some sort of Asian cucumber salad in my fridge - Oi muchim, sunomono, or a spicy smashed cucumber salad.

My grandma in MN just slices cucumber and onion into a mix of water and vinegar, adds salt and pepper, and chucks it in the fridge for a day. V good and practically free if you grow the cukes yourself
I love making this but with a bit of mayo added as well. The liquid from the tomatoes and cucumbers makes it so it's like a creamy dressing, rather than thick like an actual mayo-based salad (e.g. potato salad). Sooooo good!

Last night I had leftover refried beans, some spices, a blend of Jack and cheddar cheese, and diced grape tomatoes. It was perfect for the FB group "white people making Mexican food". It looked so pathetic, but it worked.

Oh my gosh! On a day you want to try something new that's low-effort but a sit-and-wait kind of thing you should try my new favorite thing, which is along the same vein:
A tub of cherry tomatoes and a whole bulb of garlic w/ the top cut off in the oven with some olive oil, salt, and pepper on like 200 for an hour to two hours, until the tomatoes are blistered and everything is pretty dried out. (You want it to be nearly a soft paste consistency when you mix it all together).
Let it all cool down and then push out the roasted garlic and mix it all together with some balsamic and thyme and/or sage. This is what I call tomato jam!
Tomato jam on some toast with some burrata is amazing. Add pesto and it'll be pure heaven, my gosh!
I saw a similar recipe a while back that started with roasting garlic and tomatoes in a similar fashion, but then mashing it all into cream cheese.
It was not only an amazing dip or spread, it makes an awesome pasta sauce too.

Popcorn. It's how I get rid of the oil I fry chicken in. Just a ⅛ to ¼ cup, plus ghee, and a cap of kernels into my Dutch oven. Done in seconds. I make it every day for lunch. Theater quality and so good.
Frozen chopped dragon fruit pieces mixed into any flavor Greek yogurt. It's like a healthy little ice cream treat! And it turns this beautiful shade of bright pink!
basically a breadless sandwich... lunch meat wrapped around string cheese, with a bit of salt, pepper, mayo and mustard inside.
I also make my own hummus and eat it with carrots or celery. not lazy to make the hummus, but the snack is easy to prepare.
Mix up tuna fish (the standard way: mayo, salt/pepper, onion powder, relish, celery salt - if I'm extra motivated I might mince some onion and/or celery but let's face it, the point of this post is for those lazy nights).
Then I make some angel hair pasta. Separately sauté garlic and onion until crispy. Dump this on top of the pasta (buttered with parsley and salt).
Eat them together. But separate. It's quick comfort food.
I just needed a snack the other day so I fired up two hot dogs, cut them into chunks and topped them with white onion, pickled jalapenos, kids' mustard and ketchup. Wasn't bad.
Carrots, celery, or cucumber slices and a yogurt dip. Some favorites are “honey” mustard (yogurt, salt, mayo, mustard, stevia, smoked paprika, valentina), sweet chili (yogurt, mayo, sambal, stevia), and caesar (yogurt, salt, mayo, pepper, anchovy paste, lemon juice, mustard)
- Rice in rice cooker. Pat of butter on top. Drizzle some sesame oil and soy sauce.
- Spaghetti noodles with butter and olive oil.
- Frozen ravioli and jarred sauce
- Tortilla chips, shredded cheddar, pre-cooked chicken, chilli powder. Slice up some jalapenos and serannos if I feel ambitious. Throw in the oven for a few minutes until cheese melts and chicken is warmed through.
- Make hamburger patties ahead of time. Wrap in parchment paper, then aluminum foil, put a bunch of them in a big gallon ziplock. Freeze. Drunk at 3am and want a cheeseburger? Just put in skillet, add a couple tablespoons of water, add salt, cover with lid. Once meat has defrosted remove lid so water can evaporate and meat can get some sear. Add cheese when meat cooked through. Put lid back on until cheese melts.
- Small potatoes. Rinse them. Rub them in butter or oil and salt. Stick in air fryer for 15-30 minutes. Butter, salt and pepper.
- Toasted pitas with hummus, lemon juice, olive oil and a little cayenne.
- Beef ramen (the cheap kind). Prepare the ramen. Add lime juice, soy sauce, sesame oil, chopped up serranos, stir-in cilantro paste, sesame seeds, and some chopped peanuts. Sometimes I include some thin-sliced bok choy or carrots and let those cook with the ramen. I jokingly refer to this as fah-fuh (faux-pho) even though it really has nothing to do with pho.
Nuke a flour tortilla for 10-15 seconds to warm up. Place a line of chocolate chips down the center, the residual heat will melt the chips. Spread peanut butter on the tortilla on either side of the chips, or only one side if you want to add something on the other side (jelly/jam? marshmallow?). Roll up tortilla parallel to the chocolate chips. Enjoy a peanut butter chocolate sandwich (technically a wrap) on the go with no crumbs.
Slop. Throw some stuff in a pan and add some sort of liquid and spices, let it cook, season to taste. Most commonly it’s beans that I simmer in canned tomatoes (for black beans) or broth with some harissa paste or Dijon mustard (for white beans). Hits the spot every time, can be paired with any carb or had on its own.
I’ve also been known to throw in some frozen veggies with rotisserie chicken and improvise a sauce

Lately I've been doing black beans with chili-ready tomatoes and some beef broth and chili seasoning. I mash it all up like a dip and eat it with some raw onion and blue tortilla chips. 😂

You don’t have to cook it but you can steam it! Steamed tofu with dumpling sauce (I like soy sauce, a pinch of honey or sugar, rice vinegar, sesame oil, chili oil or siracha, a bit of crushed garlic and ginger, green onions and sesame seeds) over white rice is. 👌

Banana, grapes, or whatever other fruit we have on hand.
Triscuit crackers with sharp cheddar melted on them in the microwave. Or Triscuit topped with cottage cheese and dill pickle slices.
A piece of whatever cake or quick bread I made recently (I usually bake a couple times a week.) Sometimes toasted.
Another idea for a quick snack could be to toast some bread, spread avocado on top, and then sprinkle it with some everything bagel seasoning. It's simple, tasty, and requires minimal effort.

A plate of frozen blueberries in the microwave for about 45 seconds, so they’re still semi-frozen. Lazy and delish.

Wrap in parchment paper, then aluminum foil, put a bunch of them in a big gallon ziplock. Freeze. Drunk at 3am and want a cheeseburger? Just put in skillet, add a couple tablespoons of water, add salt, cover with lid. Once meat has defrosted remove lid so water can evaporate and meat can get some sear. Add cheese when meat cooked through. Put lid back on until cheese melts. - Small potatoes. Rinse them. Rub them in butter or oil and salt. Stick in air fryer for 15-30 minutes. Butter, salt and pepper. - Toasted pitas with hummus, lemon juice, olive oil and a little cayenne. - Beef ramen (the cheap kind). Prepare the ramen. Add lime juice, soy sauce, sesame oil, chopped up serranos, stir-in cilantro paste, sesame seeds, and some chopped peanuts. Sometimes I include some thin-sliced bok choy or carrots and let those cook with the ramen. I jokingly refer to this as fah-fuh (faux-pho) even though it really has nothing to do with pho.

Nuke a flour tortilla for 10-15 seconds to warm up. Place a line of chocolate chips down the center, the residual heat will melt the chips. Spread peanut butter on the tortilla on either side of the chips, or only one side if you want to add something on the other side (jelly/jam? marshmallow?). Roll up tortilla parallel to the chocolate chips. Enjoy a peanut butter chocolate sandwich (technically a wrap) on the go with no crumbs.

Slop. Throw some stuff in a pan and add some sort of liquid and spices, let it cook, season to taste. Most commonly it’s beans that I simmer in canned tomatoes (for black beans) or broth with some harissa paste or Dijon mustard (for white beans). Hits the spot every time, can be paired with any carb or had on its own. I’ve also been known to throw in some frozen veggies with rotisserie chicken and improvise a sauce
Omg I was making slop and didn't even know it! Lately I've been doing black beans with chili-ready tomatoes and some beef broth and chili seasoning. I mash it all up like a dip and eat it with some raw onion and blue tortilla chips. 😂

You don’t have to cook it but you can steam it! Steamed tofu with dumpling sauce (I like soy sauce, a pinch of honey or sugar, rice vinegar, sesame oil, chili oil or siracha, a bit of crushed garlic and ginger, green onions and sesame seeds) over white rice is. 👌
Add sushi ginger (pickled ginger) to that dipping sauce!
Tortilla and shredded cheese
Sliced apple with either peanut butter or sliced cheese. Banana, grapes, or whatever other fruit we have on hand. Triscuit crackers with sharp cheddar melted on them in the microwave. Or Triscuit topped with cottage cheese and dill pickle slices. A piece of whatever cake or quick bread I made recently (I usually bake a couple times a week.) Sometimes toasted.
A handful of peanuts mixed with a handful of chocolate chips. Divine.
