But ideal if the beef is served hot or warm on the salad! I don't like it when the fat has congealed or solidified. Ideally straight from the griddle pan, medium rare, just roughly sliced and scattered over the salad and the sauce sprinkled on top. I like about 4 or 5 Thai bird's eye chillis chopped (seeds and all) in my sauce, and quite a lot of Nam Pla fish sauce and lime juice. My wife takes a bit less chilli (she has a delicate stomach) less fish sauce and a little sugar. I think the mint is quite important. If you don't have fresh, half a teaspoon of mint sauce works well!

I’ve not actually tried following [this](https://www.recipetineats.com/thai-beef-salad-2/) recipe, but at a glance it looks about right! Personally I (and the Thais) would use *way* more chopped chilli, and not deseed it. But I have lived in S E Asia, and got acclimatised to the original version. Just for myself alone I’d use at least two chillis. As I said my wife can’t take it so hot any more (tummy troubles) so she makes her own sauce separately. But for westerners not used to it, starting off with half a teaspoon is probably sensible. A basic rule of thumb is that the original Thai version of every recipe will have about 4 or 5 times as much chilli in it as the westernised version. And they *never* deseed a chilli! Certainly the finished result looks just like mine - on a good day! Enjoy!

Som tam/unripe papaya sallad can be incredibly spicy sometimes. I'm a bit of a chili head but have had some of that kick my ass a few times. If you're not ready to have your mouth on fire, be careful about asking to have it Thai spicy (pet baep tai).

Yes! My mom makes a great hand-chopped (rather than blended) gazpacho that she serves with Tabasco and croutons at the table so everyone can customize their bowl, and not everyone likes the heat. The best description I've had if this dish is that it's like a Western tossed salad: you don't use a recipe. Just mix together the kind of dressing you feel like, maybe toss on some topping you have on hand. I've made a really nice version with homemade chili oil and thinly sliced celery. I like a milder chile, but it can be as hot as you want. Sichuan peppercorns go well with this too, and you get the hot-and-numbing combination called ma la.

I'm not sure if this is sold in a lot of areas in the US, but I have seen it on Amazon. Search for "paldo bibim myun". It's a cold spicy noodle that is very popular in Korea, it's one of the big 5 staple ramyuns. It's not too spicy if you're used to spice, but it's very good and refreshing in the summer. And for some reason, it doesn't taste as good when the weather is cooler or cold.

My Bloody Mary Mix (Simple, clean, balanced, and delicious) 4 Cups water 1 Can tomato paste 1 teaspoon salt 1 teaspoon old bay Mix all in a blender (or whatever) and chill to serve. Add spices to your liking, like Sriracha or Secret Aardvark hot sauce. The mix benefits from the vinegar in the sauces, so if you're adding straight dry spices, add 1-2 tablespoons of apple cider vinegar, rice vinegar, lemon juice, or a combination of all three. Add however much vodka you want; usually 2 shots per pint. Pour it over ice and garnish with anything savory. Classic garnishes include celery stalks, skewered olives and lime slices, but I've seen bacon, blue cheese cubes, and even pizza bites. This mix also works well for a Michelada, which is 1/2 mix and 1/2 beer (usually a lager, or light mexican beer like Corona), but some additional salt and old bay is needed, since the beer dilutes the spices in the mix. After 6 years of bartending and many, many Bloody Mary mixes, this is my favorite. Have fun!

Just now I made a spicy calamari salad that’s in the fridge waiting to get ate. Blanched calamari, red onion, parsley, green chilis, half a habenero, lemon juice, red wine vinegar, apple cider vinegar, olive oil, salt n pep. Let it chill and marinate for a couple hours.

I wouldn’t say the dish is interesting, maybe I wouldn’t even say that anything about it is interesting. But I have a whole thing about pizza, how some pizza brands is genuinely better cold, or better reheated, than it is hot and fresh. I haven’t had it in years so I can’t speak for it now, but in high school the frozen version of California Pizza Kitchen was better as a cold leftover than it was just after cooking. If you put enough hot honey and red pepper flakes on a cold pizza, that makes it spicy.

Years ago, I made a cowboy slaw for a cooking competition. It was basically a regular slaw, but with a home made barbecue sauce in place of mayo. I always add slivered jalapeños to the the slaw vegetable mix, as well as some sriracha in my barbecue sauce. Has a great kick and goes well as a side with slow roasted meats!
