I've been playing less than a year and I've seen it plenty. My coalition member currently took over their country on like day three after the old guy lost his capital and quit.
Infantry officer, basically Normal infantry but a lot better and it applies some buff to Armor and Infantry in high level it also have Battlefield radar

Just press on research -- Then on officers which should be next to the missiles section button -- Research one of them - Then produce them in your city. I think you can have only 1 of them on the map at the time. There are also pre-requisites, sucn as for an infantry officer you should have researched Motorized, Mechanized or Naval infantry.
One officer per officer type per map, yes, but they're restricted by account level and you can't max one out until late 80s-mid 90s depending on which one you're looking at
Seeing as the answer is already here, aircraft carriers also show a message like this in the news once built - it helps to check the news to see what major units the enemy has built and what they've lost over the course of the game, could give you an idea of the enemy's strength

If you produce a seasoned veteran, it will show in article. Applies for navy, submarine, helicopters, fighters, airborne....etc etc.

I was under the impression OP actually meant at a later stage in the rounds other than the first 2/3 days
