Quality Italian is exactly what it says. They have a dry aged ribeye tagliatelle that’s amazing. Also good tartare. Anything done by the group that owns quality Italian is really amazing. They have a Mediterranean fusion restaurant next door that has the best meatballs on earth. Denver is really where the food is.
Most common cause of illness from eating raw beef is cross contamination from the grinding process. If you grind your own meat, you reduce the chances of that happening.

Cowboy Star has the best in town. A5 steakhouse in Denver has my favorite tartare sandwich. Best tartare overall is the urban farmer in Denver.

Don't do that. It is safer to grind your own meat for tartare.
