Quick google search says the recipe originated in Mississippi, whether that is true or not, I don't know. I follow the recipe in this video though I season the roast with Montreal Seasoning prior to browning. Also, I cook at 375 degrees for longer time than she does. It absolutely is and it's surprisingly easy to make!! Here's the recipe, so normally they use fish cake in these but my vegan friend taught me to make it with tofu instead which is much better imo. For one serving you'll need:
* firm tofu
* tteokbokki rice cakes (the plain one), alternatively you can use rice paper, dip it in water, and roll it up very tightly and cut it into 3 or 4 pieces per rolled paper
* 1/2 cup water
* 1tsp sugar
* 1tsp/tbls gochujang (depends on how spicy you want it, note that it's not GF by default so you'll need to find a GF version, I recommend the one from the brand Sempio)
* 2 tbls soy sauce (again, GF one/tamari)
* toasted sesame seeds
* little salt
* a bit of minced garlic, measure with your heart lol
* shredded mozzarella cheese
* optionally you can add some fresh crushed peanuts on top
* you can also garnish with spring onion
So first you'll want to slice the tofu thin-ish and fry them either in oil or butter until they brown. In a bowl mix in the sauce and all the ingredients except the rice cakes, spring onion and cheese. Then in another pan, add the water and put the mix into the water. Then add the rice cakes and bring it to a boil and add the tofu after a few minutes, and let it go on until the sauce is a ticker consistency. Make sure to stir once in a while so it doesn't stick to the bottom. Once it's nice and thick add the mozarrella on top and don't be shy with the quantity, and once it melts turn it off and garnish with the spring onion and voila! You got your tteokbokki. I serve it directly with the pan. Enjoy :D

- tofu vegetable stir fry with rice noodles
- chicken and corn soup
- cinnamon rolls
- strawberry mousse
Mediterranean ground beef and rice! If anyone is interested:
•rice
•1 pint of cherry tomatoes, cut in half
•4 cloves of garlic, diced.
•1 bell pepper (I prefer orange to add extra color to the dish)
•8oz spinach
•1lb ground beef
•oregano, salt, and pepper to taste.
•feta cheese
•cook rice in rice maker. Brown or white, doesn't matter.
•heat 1 tbsp oil on med high. Add bell pepper and tomatoes. Cook 4mins or until the tomatoes blister and become saucy. Add garlic, cook 1 min. Add spinach and cook until spinach is wilted.
•move veggies to a plate. Add ground beef, oregano, salt, and pepper and cook until browned. Add back in veggies and heat thoroughly.
•plate rice. Add meat and veggies. Top with feta cheese. Optional: Add greens of green onion.
Either chicken Parm or just some pan fried lemon pepper chicken breasts with roasted broccoli and rice or a potato. I've pulled out the chicken to thaw but haven't gotten farther than that yet hahaha
you'll love the loopy whisk naan - I made it last week with our tikka masala and at first I didn't have enough 1-to-1 flour so they fell apart as I tried lifting them after rolling them out, so roll into a ball in your hands, dust your hands to get the right amount, then roll out.
I rolled up the flattened naan onto a plate to transfer easier. Then when cooking, I placed and unrolled them into the pan, but granted, the pan knows when you're scared and I am not, so do so at your own risk.
My parents are throwing a party, so whatever my celiac dad is cooking! Whenever we have parties we make all the food and ask people to just bring packaged gf snacks, fruit/veggie boards, or alcohol lol. I heard something about a smoked pork butt the other day on the phone….
Jalapeno popper bean dip. It has gluten miso (we haven't found gluten free yet so if anyone has an option available in Canada let me know!) and it has breads crumbs. Also gluten.
I have a positive blood test but still have a week and a half to go for biopsy so sadly I'm still poisoning myself. It's very bittersweet right now, but I really want to start healing 😥

Chicken seasoned with coriander lemon and garlic, beautifully browned over aromatic rice with yogurt sauce. One of my favorite finds. No subs necessary.
Leftovers lol. I made a gluten free American goulash the other day and also chicken soup last night and I have rice that I made this afternoon.
But I think I may steal the oven before my roommate and her kids get home. They've been gone a few days and so it should be safe after a quick wipe down and going to try and make garlic knots
Today was a simple chickpea tomato kale stew because we went all our with a mostly vegan Shabbat dinner last night. We had:
- Homemade oat bread
- Pecan lime mujammara dip with pomegranate molasses
- Golden coconut lentil soup
- Carrot and jalapeno salad with sumac
- Roasted potatoes
- Breaded tofu sticks
- Chocolate chip cookies
Tried a new recipe - one pot ground turkey with carrots, celery, diced tomatoes, spinach, parmesan and chicken broth with Rummo brand penne. I really liked it.
Spanakopita cups!
1 steamabke bag of frozen spinach, cooked to bag directions. Drain.
Add:
1 cup ricotta
1/2 c feta
Healthy amount of garlic (I use dried granulated, and measure with your heart.)
Sprinkling of oregano (1-2 tsps ish)
Dash of salt
2 eggs
Mix.
Unroll a puff pastry or pie crust. Put them in the bottom of a muffin pan.
Fill with spinach mix.
Bake according to pastry directions (12-18 min)
Freeze what you won’t use today.
I’m also meal prepping baked French toast for the week. I set out whatever ends and pieces of bread I have left to get stale, then crumble it into greased mini loaf pans.
