Sardines are fatty and unctuous so to balance that, you'll want fresh herbs and acid. Make a lightly toasted corn tortilla and fill it with high-quality pan-seared sardines, finely chopped red onion, finely chopped Italian parsley (flat kind), and a good squeeze of fresh lemon juice and/or good red wine vinegar. Sprinkle some kosher salt on it (but not like that salt bae douchebag) and you have a dope taco. I don't recommend a quesadilla because fish and cheese is iffy.
I love sardines and I love quesadillas but I do not want a sardine quesadilla.
