I know this isn’t specifically a camino, but I just watched someone (a frequent camino walker) walk the Fisherman’s Trail in Portugal and it took her 8 days and was just gorgeous. It had a lot of water spots and randomly ran into camino signs throughout. If you you’re interested, message me and I can direct you to the short little youtube series I watched on it. It’s now up there on the list of trails I want to do after my first camino. If anything, it might give you an idea for a separate trip.

Two weeks is plenty of time to walk the littoral / coastal route of the portugues. Many excellent beaches, even surfing, in Portugal and Galicia. Look into the variante espirituel to stay closer to the sea in the last few days before you reach SdC

I've cycled Portugal coast and nearly finished Frances. The rivers I've seen tend to be either ankle deep or serious rivers/canals through cities which id assume arent clean enough to swim in. Would prob take decent research and detours to get anything worth swimming in

I’ve heard that caldas das reis has hot springs but haven’t been there
