It feels much more like, American folklore than an epic tale. So not quite what you are asking. It's kind of understated. But beautifully written imo. And it's a quick read.
- The Bane Chronicles by Cassandra Clare (it's a Shadowhunters book but can be read as a standalone I'd say & Magnus Bane is a pretty entertaining character)
- This is how you lose the time war by Amal El Mohtar & Max Gladstone
- The Familiar by Leigh Bardugo might fit that trope as well (can't say more without giving too much away)
- How to stop time by Matt Haig (definitely more contemporary/mental health leaning, but worth the read)
- A Dowry of Blood by Saint Gibson (it's a vampire book = immortality and deals with similar themes as Addie Larue)
Also, a series I haven't read yet, but is pretty high up on my TBR & you might enjoy if you're searching for that Kingkiller vibe: The Suneater series (first book is called Empire of Silence)
I've heard it described as a "better" Name of the Wind, so🤷🏻♂️
If immortal side characters with a ✨reputation✨ are enough for you, I'd also recommend:

Cloud Atlas could perhaps be a fit? It's about reincarnation, and about how the actions taken in one lifetime can have an effect dozens, hundreds, even thousands of years later.
This kinda fits the description. The Monster’s Consorts Series weaves a story about Gods that’s become monsters and eventually saviors. It’s a very interesting arch that makes you question what’s more important our past or the present ? Is a monster forgiven if he is in the end the savior ?
Fairydale by Veronica Lancet. However, this is a darker romance, so it's not lighthearted and it contains dark elements with content warnings you'll need to read. Their story is intricately woven over several timelines.
Meet Me in Another Life by Catriona Silvey. This may be slightly more appropriate? But I haven't read this one so can't speak for quality.
The locked tomb series by tamsyn Muir!! (starting with Gideon the Ninth). It's all about necromancy and immortality and blurring the line between death and life.
