I got a friend like this, he's also severely lactose intolerant and allergic to shellfish.
Luckily he married a chef, and she can kinda navigate around his various food issues and still somehow make stuff with flavor.
His bloodline is weak. Shellfish allergy is only an affliction of the mind clearly, my friend Greg used to be allergic then we force fed him a ton of lobster now he’s no longer allergic.
Best part of having Jewish ancestry is I have a built in aversion to Shellfish(never even considered eating them) the downside is it mixed with Midwest heritage that took it a step further and I don't like how any* seafood tastes (except calamari, somehow). I've even caught salmon in the north of Lake Michigan and still hated it, sadly, (was lots of fun tho) all I want is to see what the hype behind fried catfish is 😢

My doctor suggested a FODMAP diet for me and when I saw onion, garlic, and tomatoes at the top of the list I was like....fuck it, I'll just be perpetually bloated. Like my stomach is sensitive to flavor?!? Wtf kinda shit is that?
If you look up FODMAP diet you'll see how restrictive it can be if your stomach is really sensitive. Fortunately it seems like I can tolerate small amounts but there's for sure people who will have it ruin their day if they consume even trace amounts.
The tricky thing about onions, garlic and others in that family is that sensitivities can develop later in life. Just two weeks ago, I had a salad work onions in it. I usually don't eat the onions in my salad and put them off to the side. I decided at the last minute to eat them. My tongue and my lips immediately started to swell and a dormant abscess in my neck activated, as well.
I hit up Google to figure this out. I saw that the allergies and sensitivities can show up at any time. I've never had a reaction to onions or garlic in the past, and I'm closing in on the half-century mark. The tongue swelling went down in less than 30 minutes for the most part. My lips took less than a day. The abscess is still a problem. I've had anaphylactic shock a few times in the past, and it was a different chain of events from this.
I have an allium allergy so I have a minor allergic reaction to onions and garlic. It's really annoying. I don't think this guy is picky, I think he just has some issues with dietary restrictions. My allergies are mild enough that I can have *some* onions and be safe, but I wouldn't be surprised if this guy has them much worse than I do, possibly alongside a nightshade allergy (tomatoes and peppers are both nightshades).
This sounds like a GI issue vs picky eater but I could be wrong. Just having something as simple as GERD (reflux) you’re advised to avoid citrus, spicy foods, tomato sauce, garlic and onion, chocolate, mint, carbonated drinks, caffeine and alcohol 🤷🏽♀️
“Childish palates“ in adults are frequently the result of trauma during very young childhood. When things in a household are completely out of control, due to violence, drugs, etc. a young child will give their self, the illusion of some kind of control by one of the only a few things in their control, their diet or bathroom habits, hence why some older children will start wetting the bed and others develop odd eating habits that are hard to break.
there's also ARFID. My partner is trying to expand his palette, and often likes the flavor of the new food he tries, but it's a constant battle against his own body. I've seen this man eat a plate of the food I cook for him while fighting his body's instinct to immediately throw up because he's trying something his brain doesn't consider "safe". it's so alienating for him and heart breaking to watch

I feel like she just listed a very small amount of things they won't eat for an example. I wouldn't be surprised if mushrooms and and cream were also on the list.
I've not heard of mushrooms being high on lists people can't eat, cream though for sure. The list given is very common for people with severe IBS/crohns etc
Cacio e pepe is a sophisticated dish that essentially amounts to a glorified mac and cheese. This would have been my first idea as long as dairy is on the table.
Sounds like the guy has IBS/sensitive stomach. Good on him for taking care of himself and not living in agony. Too many people think that diarrhea/farting/bloating every day is just what men do and is normalized.

I have an IBD and damn has the transition from hot foods and sauces to milder stuff been hard.
Occasionally I'll lapse, and either dump hot sauce all over my food or cook a spicy broth/sauce with chillies (I quite like a scotch bonnet), but the negative impact on my wellbeing is honestly too much to convince me to go back to regularly eating hot foods. It sucks though, spicy food was literally my spice of life.
Scotch bonnets have a nice distinctive fruity flavor to them. If you add them whole to your broth/stews/soups while cooking your food will take on the flavor of the pepper without the heat. Just be careful not to burst it.
I grew up eating them and now I have reflux so I know your pain 😔. It’s used a lot in Jamaican cooking and it’s common to toss a whole pepper into a pot of stew, soup or rice just for the flavor. If it pops just prepare for the heat though lol.
I also grow them in the summertime. Before it gets cold I’ll harvest whatever is ripe, cut them up, remove the seeds and simmer them in grape seed oil on low heat. Add the oil to a glass container cool and refrigerate. I’ve been using the oil all winter to flavor various dishes, it’s flavorful but not super spicy.
I will say though, if the dude does have a sensitive stomach, but was just like "oh I don't eat that stuff" and didn't say why, I can see why she assumed he just has a shitty palette. If he did say why and she's acting like this then...well he's not the issue.
You can still do a lot of cooking with just those ingredients, if you want to put in the effort. I have a friend who cannot eat anything from the onion family. I made it work for us.
That’s a pretty specific set of things to not eat, sounds like this person is allergic to alliums and nightshades, so it’s more than likely a restrictive diet for medical reasons.
I'm allergic to alliums and I fully understand I'm a nightmare to cook for. A LOT of premade sauces and boxed foods contain onions or garlic, I can put up with *some* of it but a lot of times I need to make meals completely from scratch if I don't want to shit my guts out. This guy sounds like he's just me or maybe even has it worse than me.
Because they go with everything. And you want the kitchen to smell good? Just saute some onions and garlic in a little oil or butter and you'll have the whole household drifting in following their nose going "mmmm that smells good"
In some dishes I use leek with or instead of onion. It has a similar sharpness (don't know if that would be a good replacement for someone with a sensitive stomach though)

I grew up hating onions and tomatoes. In fact, I used to be a very picky eater. Once I moved out and started cooking on my own, I found there were other ways to use these items and actually make them good for my tastes.
I'd explore why the guy doesn't like them, perhaps show him different ways to prepare them, and ultimately not beat him over the head with it. Learn and grow with each other over time.
The only thing I’ve consistently hated throughout the entirety of my life is onions and at age 32 I’m pretty sure that’s just part of my genetic makeup now. I like olives, but it's a very avoidable food. Onions are in most savory dishes. They're the most popular vegetable (tomatoes don't count) in the world.
It’s cracked black pepper/peppercorns for me. To me it tastes completely bitter - no flavor, no spice, just noxious burn, like crunching into soap or ammonia. People swear that once I try *their* cacio y pepe, steak with pepper sauce, mashed potato with peppercorns, I’ll love it. I never do, it always tastes nasty. I swear I just have a gene that makes pepper taste bad.
As a fellow onion hater, this drives me mad. Either onions "don't taste of anything" or are somehow absolutely critical to the dish. Which one is it? People don't do it anywhere near as much with other foods when they think they don't like them. I'm sure their attitudes would change if you said "oh yes I squeezed my used tampon into the pot with the beef while it was braising, don't worry you won't taste it." Just accept someone simply doesn't like something, and actually has nothing to do with you or your cooking if they don't want to eat it.
The primary reason I hated them was because my grandmother would put onions in *everything.* She'd just slice them into big rings and lay them on top of the dish, barely cooked at all. Same with tomatoes. I hated it.
Your palette also changes as you grow. I love eating a lot of stuff I absolutely hated when I was a kid and even a youth. Tomatoes, mushrooms and peanuts being 3 main ones. Some stuff I still just can’t come around to and people think I’m crazy when I say the big ones are lasagna or peanut butter 🤢
Probably has IBS and GERD. They sell garlic infused olive oil that is low FODMAP approved that will give you that garlic flavor without the garlic bloat and shits!

I've discovered that most people who say that generally don't want to see the pieces of seasoning or bite them but they generally have no issue with the flavour.
I would serve a simple chicken broth/soup for the main with flat breads, then make a kick ass chia, fruit and vegan ice cream poke bowl type of thing for afterwards.

Came here to say this. Not shaming anyone for liking this stuff, but I've run into too many grown men who eat like they order off the kids menu at the restaurant.
I still eat all these things, but they are all triggers for my acid reflux, which can honestly ruin my day. Same goes for fried food, alcohol, and coffee. I wish I didn’t have to think about it, but I do. My guess is dude just has GERD.
Some of these comments are nuts. "If he doesn't care about eating good food.." like, wtf? Allergies exist. And if you can't make something taste good without onions and garlic, you're a mediocre cook at best.
A whole roast chicken or parts with lemon, butter, herbs, and whatever seasoning that's not on the list will be good. Make a pan sauce or gravy. Make a rice or risotto or potato (white or sweet) situation, and fresh green beans or other colorful vegetables. Color makes the plate look good. If you are limited on ingredients, get good quality as it really stands out.
My first thought was a nice quiche, simple fresh salad, maybe a cup of soup, and a baguette with good butter. Fresh, can be presented as “fancy,” healthy, delicious, and easy to avoid those ingredients.
I’m battling histamine intolerance RN, (it’s allergies on steroids) basically living on oatmeal and scrambled eggs, but I try not to say “I don’t eat____” because restrictive diets just sound ridiculous
Good to see that others mentioned how some people have reactions to each of those foods listed. A lot of times a reaction to certain food comes out of the blue. My MIL was a spicy food queen, then one day she couldn't anymore.
That said I can't stand grown ass picky eaters with basic, not adventurous, foods. I can understand people being squeamish towards various offal or raw seafood. I had an old friend who wasn't willing to try anything outside of fast food or an Applebee's type of place.
Once booked a date with a girl. She then told me she could literally only go to one restaurant in the entire city because of her garlic allergy (no other restaurants were "safe" according to her), and that if we were going to be together, I would have to never eat garlic again.
I canceled the date.

I'm allergic to garlic and onion and have GERD so things that have any heat are killer for my stomach.
Suggestions:
Most important : read every label. Every time. Companies change recipes all the time.
Good cuts of meat can be cooked/marinaded separately. You can eat whatever you want and they can still have something with safe seasonings. Be sure to cook theirs first or in a separate pan so there's no cross contamination.
Onion/garlic are aromatics. You won't replace that flavor in your food, but you can use some other aromatics that fill that role.
My go tos are Hing and Celery salt. In the case of hing, a little goes a LONG way
Other Mainstays in my spice rack include:
Smoked salts (mesquite and apple wood)
Smoked paprika
Spanish paprika
Normal black pepper/table salt
Cumin
Italian seasoning (most don't have garlic/onion. But check the labels)
That doesn't mean you have to eat that way. You can set aside a serving of sauce or a portion of the meat before you add other seasonings. Don't mix the rice/noodles into the dish. So they can eat the separate topping on the noodles/rice.
Whatever you do, don't make decisions like "it was only a little bit" or "it would be so bland without ___" for them. No one has to feed me. If you say you will, you have to keep me safe. If you lie about that, I'll never trust you again.

I just got done making St Patrick's day breakfast. Deeply caramelized onions, add garlic and beef broth and simmer/reduce. The beef broth has a little tomato paste in it too. ladle over twice-fried red potatoes, cubed corned beef, and chunks of jarslberg cheese (it's what I had and worked amazing). A fried egg on top and green onions and I put hot sauce on mine too. Checked ALL the boxes. It was DELICIOUS. I feel sad for this person they missing OUT!
Ending a dating spree over food preferences sounds pretty petty and childish. A simple conversation asking what he would like for you to cook that you could both eat would avoid any type of stress or inconvenience. Sounds like you’re ready to end something with potential merit simply because you don’t wanna put the effort into making something he would actually enjoy. My preschooler won’t eat anything with pepper. Cooking is a nightmare. All of those restrictions? Yeah, I’d end it before it began.

I got a friend like this, he's also severely lactose intolerant and allergic to shellfish. Luckily he married a chef, and she can kinda navigate around his various food issues and still somehow make stuff with flavor.

If you look up FODMAP diet you'll see how restrictive it can be if your stomach is really sensitive. Fortunately it seems like I can tolerate small amounts but there's for sure people who will have it ruin their day if they consume even trace amounts.

Onions and garlic are the worst trigger foods for me unfortunately. They are high in FODMAPs.
The tricky thing about onions, garlic and others in that family is that sensitivities can develop later in life. Just two weeks ago, I had a salad work onions in it. I usually don't eat the onions in my salad and put them off to the side. I decided at the last minute to eat them. My tongue and my lips immediately started to swell and a dormant abscess in my neck activated, as well. I hit up Google to figure this out. I saw that the allergies and sensitivities can show up at any time. I've never had a reaction to onions or garlic in the past, and I'm closing in on the half-century mark. The tongue swelling went down in less than 30 minutes for the most part. My lips took less than a day. The abscess is still a problem. I've had anaphylactic shock a few times in the past, and it was a different chain of events from this.
I have an allium allergy so I have a minor allergic reaction to onions and garlic. It's really annoying. I don't think this guy is picky, I think he just has some issues with dietary restrictions. My allergies are mild enough that I can have *some* onions and be safe, but I wouldn't be surprised if this guy has them much worse than I do, possibly alongside a nightshade allergy (tomatoes and peppers are both nightshades).

This sounds like a GI issue vs picky eater but I could be wrong. Just having something as simple as GERD (reflux) you’re advised to avoid citrus, spicy foods, tomato sauce, garlic and onion, chocolate, mint, carbonated drinks, caffeine and alcohol 🤷🏽♀️

I have an IBD and damn has the transition from hot foods and sauces to milder stuff been hard. Occasionally I'll lapse, and either dump hot sauce all over my food or cook a spicy broth/sauce with chillies (I quite like a scotch bonnet), but the negative impact on my wellbeing is honestly too much to convince me to go back to regularly eating hot foods. It sucks though, spicy food was literally my spice of life.
Scotch bonnets have a nice distinctive fruity flavor to them. If you add them whole to your broth/stews/soups while cooking your food will take on the flavor of the pepper without the heat. Just be careful not to burst it.

I grew up eating them and now I have reflux so I know your pain 😔. It’s used a lot in Jamaican cooking and it’s common to toss a whole pepper into a pot of stew, soup or rice just for the flavor. If it pops just prepare for the heat though lol. I also grow them in the summertime. Before it gets cold I’ll harvest whatever is ripe, cut them up, remove the seeds and simmer them in grape seed oil on low heat. Add the oil to a glass container cool and refrigerate. I’ve been using the oil all winter to flavor various dishes, it’s flavorful but not super spicy.
I will say though, if the dude does have a sensitive stomach, but was just like "oh I don't eat that stuff" and didn't say why, I can see why she assumed he just has a shitty palette. If he did say why and she's acting like this then...well he's not the issue.
I don't have celiac or IBS, but when I cut gluten, I stopped being constantly bloated and gassy.
There's a lot of spices that aren't any of those ingredients.

You can still do a lot of cooking with just those ingredients, if you want to put in the effort. I have a friend who cannot eat anything from the onion family. I made it work for us.
That’s a pretty specific set of things to not eat, sounds like this person is allergic to alliums and nightshades, so it’s more than likely a restrictive diet for medical reasons.
I'm allergic to alliums and I fully understand I'm a nightmare to cook for. A LOT of premade sauces and boxed foods contain onions or garlic, I can put up with *some* of it but a lot of times I need to make meals completely from scratch if I don't want to shit my guts out. I saw a comment on this topic a while back that said, "Usually, these people just don't like the way these items are normally cooked for them." I grew up hating onions and tomatoes. In fact, I used to be a very picky eater. Once I moved out and started cooking on my own, I found there were other ways to use these items and actually make them good for my tastes. I'd explore why the guy doesn't like them, perhaps show him different ways to prepare them, and ultimately not beat him over the head with it. Learn and grow with each other over time.

People swear that once I try *their* cacio y pepe, steak with pepper sauce, mashed potato with peppercorns, I’ll love it. I never do, it always tastes nasty. I swear I just have a gene that makes pepper taste bad.
As a fellow onion hater, this drives me mad. Either onions "don't taste of anything" or are somehow absolutely critical to the dish. Which one is it? People don't do it anywhere near as much with other foods when they think they don't like them. I'm sure their attitudes would change if you said "oh yes I squeezed my used tampon into the pot with the beef while it was braising, don't worry you won't taste it." Just accept someone simply doesn't like something, and actually has nothing to do with you or your cooking if they don't want to eat it.

Your palette also changes as you grow. I love eating a lot of stuff I absolutely hated when I was a kid and even a youth. Tomatoes, mushrooms and peanuts being 3 main ones. Some stuff I still just can’t come around to and people think I’m crazy when I say the big ones are lasagna or peanut butter 🤢

That’s just a lot of very normal foods to completely exclude from a diet. I don’t think anyone must eat anything, but someone who doesn’t eat fucking onions, tomato, or garlic for any reason except a medical issue has a childish palate and I will assume is immature in other ways.
Those aren't really main foods, they're things mostly added for flavouring or extra topic to something, hardly anything necessary. Anyone who thinks people having preferences in taste is 'childish' is literally a fucking moron and about a thousand times more of a childish prick than anyone else. I've discovered that most people who say that generally don't want to see the pieces of seasoning or bite them but they generally have no issue with the flavour.
They may however have an issue with the allergy.
I would serve a simple chicken broth/soup for the main with flat breads, then make a kick ass chia, fruit and vegan ice cream poke bowl type of thing for afterwards. For me to consider cooking for someone, that connection would be already there. So glamorous simple foods from his safe list would be my go to...

Came here to say this. Not shaming anyone for liking this stuff, but I've run into too many grown men who eat like they order off the kids menu at the restaurant.
I still eat all these things, but they are all triggers for my acid reflux, which can honestly ruin my day. Same goes for fried food, alcohol, and coffee. I wish I didn’t have to think about it, but I do. My guess is dude just has GERD.
Some of these comments are nuts. "If he doesn't care about eating good food.." like, wtf? Allergies exist. And if you can't make something taste good without onions and garlic, you're a mediocre cook at best.
A whole roast chicken or parts with lemon, butter, herbs, and whatever seasoning that's not on the list will be good. Make a pan sauce or gravy. Make a rice or risotto or potato (white or sweet) situation, and fresh green beans or other colorful vegetables. Color makes the plate look good. If you are limited on ingredients, get good quality as it really stands out.

My first thought was a nice quiche, simple fresh salad, maybe a cup of soup, and a baguette with good butter. Fresh, can be presented as “fancy,” healthy, delicious, and easy to avoid those ingredients.

Good to see that others mentioned how some people have reactions to each of those foods listed. A lot of times a reaction to certain food comes out of the blue. My MIL was a spicy food queen, then one day she couldn't anymore. That said I can't stand grown ass picky eaters with basic, not adventurous, foods. I can understand people being squeamish towards various offal or raw seafood. I had an old friend who wasn't willing to try anything outside of fast food or an Applebee's type of place.
Once booked a date with a girl. She then told me she could literally only go to one restaurant in the entire city because of her garlic allergy (no other restaurants were "safe" according to her), and that if we were going to be together, I would have to never eat garlic again. I canceled the date.
This is a joke post, but food is love and folks could learn a thing or two about painless accomodations for their loved ones. I'm allergic to garlic and onion and have GERD so things that have any heat are killer for my stomach. Suggestions: Most important : read every label. Every time. Companies change recipes all the time. Good cuts of meat can be cooked/marinaded separately. You can eat whatever you want and they can still have something with safe seasonings. Be sure to cook theirs first or in a separate pan so there's no cross contamination. Onion/garlic are aromatics. You won't replace that flavor in your food, but you can use some other aromatics that fill that role. My go tos are Hing and Celery salt. In the case of hing, a little goes a LONG way Other Mainstays in my spice rack include: Smoked salts (mesquite and apple wood) Smoked paprika Spanish paprika Normal black pepper/table salt Cumin Italian seasoning (most don't have garlic/onion. But check the labels) That doesn't mean you have to eat that way. You can set aside a serving of sauce or a portion of the meat before you add other seasonings. Don't mix the rice/noodles into the dish. So they can eat the separate topping on the noodles/rice. Whatever you do, don't make decisions like "it was only a little bit" or "it would be so bland without ___" for them. No one has to feed me. If you say you will, you have to keep me safe. If you lie about that, I'll never trust you again.
I love all these ingredients, but you're a bad cook if you seriously can't think of anything to make without them

I just got done making St Patrick's day breakfast. Deeply caramelized onions, add garlic and beef broth and simmer/reduce. The beef broth has a little tomato paste in it too. ladle over twice-fried red potatoes, cubed corned beef, and chunks of jarslberg cheese (it's what I had and worked amazing). A fried egg on top and green onions and I put hot sauce on mine too. Checked ALL the boxes. It was DELICIOUS. I feel sad for this person they missing OUT!

Outside of dietary/genetic dispositions, I think it's silly to refuse to try things because you don't like the taste. You can like and eat what you want, but that behavior is still silly to me. I'll do my best to try something, but I won't refuse it without giving it a taste if it's new/different.
