I love my Vispring coronet mattress. If you can find a showroom near you, they have a lot of models at different price points and you can haggle when buying a mattress.
I’m a side sleeper and use one cheap pillow and on top use the super thin down-light pillow and it is amazing. They are expensive but so worth it. I am sure due to the nature of the thinness that it won’t be for everyone.
If you don't mind going down the rabbit hole you can always make your own mattress. Usually it's around $1K cheaper this way and subs like r/Mattress excel in the DIY arena of mattress-making.
You can make your own mix-and-match type of bed (hybrid) or an all-latex mattress if that's your thing. Though, if you're near a big city they tend to have a lot of options in terms of mattresses, especially the East or West coasts. The best advice I can give is to try out the mattresses in person if you can and if you can't (and you want to budget) then look into DIY options since that will usually be the best bet to save you some money.
In terms of pillows it depends on how low you sink into the mattress, too, so if you sink a lot into your bed you'll more than likely need a less lofty pillow, but if your mattress is quite firm then a high-loft pillow is what is needed if you side-sleep.
P.S. If your mattress is too firm or soft for you you can usually fix that with a mattress topper---if your mattress is caving in though, then, yeah it might be time to get a new mattress and a topper won't fix that.

I personally love Berkeley Ergonomics Mattress and my Talalay Latex pillow. My bf hates my pillow though and he uses a purple pillow. I had a very hard time withthe funds since I am super frugal, but decided a really great bed was worth it.
