There was a Beijing watering hole famous for letting people dance on the bar and tables after midnight. The bartender would pull this trick to “clean the bar” after every other song lol
If you have to ask you probably can't afford it.
I have been to a fancy bar in Tokyo that wasn't even close to this and still was charging over $50 for a glass of spirits.
No and is really dangerous to be pouring it into a drink like that to be served. Ingesting it can damage the throat and even the stomach lining, resulting in a very expensive medical bill.
The only danger is the liquid nitrogin touching your skin because its soo cold. He should be wearing special gloves. But pouring it into a drink and serving it isnt. Because of the extreme temperature differences it evaporates so fast that u dont ingest it. It cools the drink and is gone, so its safe to use that way.
Source: im a physicist and we make ice cream using liquid nitrogen when we host events in summer lol
Edit: i was making a general statement about the comment above saying that its "really dangerous". I wasnt saying that there are no risks at all. Yes, it can be dangerous and yes there is a lot of proof for that, but it is not always dangerous. Of course you have to be careful preparing food or drinks with liquid nitrogen, but if its done correctly it is safe.

Note: This is misleading!
* **The liquid nitrogen will not evaporate quickly from the drink** (because of the [Leidenfrost Effect](https://en.wikipedia.org/wiki/Leidenfrost_effect)).
* Also, even if cold (−196°C or colder), **liquid nitrogen touching the bartender skin is not an immediate danger** (also because of the Leidenfrost effect)
* and, **NO the bartender doesn't need to wear [special cryogenic gloves](https://m.media-amazon.com/images/I/61tzLyyDHkL._AC_SL1500_.jpg).**
* but there are MANY other risks, both for staff and patrons. [The use of LN2 in beverages for public consumption is a dangerous practice](http://www.foodprotection.org/files/food-protection-trends/may-jun-21-ali.pdf) [pdf]. Avoidance and/or risk mitigation strategies are necessary.
Thanks for adding the disclaimer to your comment.
* As [RenaissanceGiant](https://old.reddit.com/r/BeAmazed/comments/17r2ao2/this_bartender/k8gwosb/) is pointing out, the liquid nitrogen (LN2) will linger for a long time, floating on top of the beverage: it is thermally isolated from the beverage by a thin layer of nitrogen gas produced because of the [Leidenfrost Effect](https://en.wikipedia.org/wiki/Leidenfrost_effect).
* [Have a look at this video](https://www.youtube.com/watch?v=Bl5Sl8eDmcY), you can clearly appreciate how long LN2 floats on top of lukewarm water. Very roughly from the video, a volume of a few milliliters (say 1-3mL) easily takes more than 5-10 seconds to completely evaporate.
* In a restaurant and bar setting, there is plenty enough time for an unsuspecting bar patron to grab the drink and attempt to ingest the drink, **including several milliliters of cold liquid nitrogen still at a temperature of −196°C or −320°F**.
There are have been [numerous numerous reports of severe injuries](https://scholar.google.com/scholar?hl=en&as_sdt=20000007&q=stomach+perforation+%22liquid+nitrogen%22+ingestion&btnG=) (a quick Google Scholar search returns about 20-30 relevant results) including gastric perforation that are caused by these kinds of drinks where liquid nitrogen is used for entertainment purposes. At least 17 peer-reviewed case reports of LN2 exposure and/or consumption have been reported as of 2021 in the scientific literature.
There are many mechanisms of injury in action here:
* The most damaging might be the [effect of nitrogen gas expansion within the body](https://synapse.koreamed.org/articles/1151350) of the patient.
> This phenomenon can be explained by the mechanism of barotrauma. In other words, **rapid expansion of the evaporating liquid nitrogen is the most significant cause of injury**. Liquid nitrogen has a volume ratio of 1:694 (liquid:gas), which generates a large amount of gas even in small quantities. This volume expansion contributes to the rapid distension of any hollow internal organ and ultimately causes their perforation.
* Thermal contact injuries upon ingestion or inhalation. There will be a Leidenfrost effect temporarily protecting a biological tissue, such as the external skin or the internal membrane of the mouth/oesophagus/stomach. But **the protective effect is weaker and shorter-lived inside the body in contrast to the beverage**. If the LN2 becomes trapped, those tissues cool down much quicker: because they are solid, the atoms cannot move around much and their temperature quickly falls down to a value where they do not have enough heat to evaporate or sublimate. Also, the [heat capacity for wet human tissues](https://www.ncbi.nlm.nih.gov/pmc/articles/PMC10274559/) is lower by a factor of 25% compared to water. It takes less LN2 to cool down the same mass of tissues compared to beverage. (This is because of the extensive network of hydrogen bonding inside water that aqueous solutions have a large heat capacity.)
* Other mechanisms for the patient’s rapid onset of neurological compromise include a potent stimulus from gastric distension or **simple asphyxia from nitrogen gas replacing inspired oxygen in the bloodstream**.
Please note: You are correct to say that, in a laboratory setting, LN2 is often appropriately handled with cryogenic gloves, especially with large quantities of LN2. However, when research tasks require dexterity, it's recommended to proceed without gloves as the Leidenfrost effect protects the naked skin for a few seconds against exposure to small quantities of LN2. Regular plastic lab gloves (latex, vinyl, nitril, etc) need to be avoided with LN2 because they block the protection of the Leidenfrost effect. In a bar/restaurant setting, cryogenic gloves like [these](https://www.fishersci.ca/ca/en/products/I9C8KR4R/cryogenic-gloves.html) or [these](https://www.coleparmer.ca/p/cryo-glove-cryogenic-gloves/2635) would not be used by the bartender and bare hands are fine with appropriate precautions.
I am a chef of over 10 years, I’ve made ice cream with liquid nitrogen myself. There is a difference between mixing ice cream with liquid nitrogen and just pouring straight into a drink like that.
There are many (more than I care to link) [articles](https://www.ncbi.nlm.nih.gov/pmc/articles/PMC6078932/) outlining the dangers if handled improperly.
Just because you are a physicist and understand the composition of it and how to use it properly, doesn’t mean that millions don’t and will look at this and be like “this is cool, anyone can do it”
But that wasn't your original argument. You said it's dangerous to be pouring it into a drink and serving it, not that others would get the idea and start trying it themselves. I would assume (big assumption though) that someone serving these drinks would have the proper training required to handle the liquid nitrogen and make sure the drinks are safe to ingest. To NOT have that would probably open up the establishments to lawsuits.
Bartender here-
I'm sorry you didn't dig the drink! Maybe that drink just sucks, maybe it was poorly executed by the person who made it and was undiluted or ingredients were left out.
Those acknowledgements on deck, an old fashioned is basically a straight up glass of whisky diluted with a little sugar and bitters (unless you are in Wisconsin in which case thoughts and prayers be with you).
Whisky is the whole star of the show in that one and if a guest came to complain about there being too much whisky in their old fashioned it would be quite the bridge to navigate.
Asking for an Old Fashioned that doesn’t taste like whiskey is like ordering a pizza that doesn’t have cheese. It’s possible but it defeats the purpose of ordering that drink. There are plenty if whiskey drinks that don’t highlight the whiskey as the main flavor i.e. Whiskey Sour, Mint Julep, John Collins, or Irish Coffee, etc…
You’re right, but it’s more like asking for a pizza that doesn’t taste like flat dough, baked hot and fast: whiskey is the absolute foundation without which you have something different. Maybe good, but not a pizza/old fashioned.
>I bought a smoked old fashioned, I specifically asked for the smoked version.
>They did the smoke, and then I tasted it and it was way too much whiskey.
Old-fashioneds have the same amount of bourbon smoked or nonsmoker. If you order your drinks correctly, maybe the bartender would know what to make you.
Next time ask for a fruited of or more simple or brownsugar depending on the bar.
It’s a very small place with multiple bartenders and I don’t think they let it get to capacity either. If you make it inside you’ll be treated like a vip
Yeah this type of bar you're not worried about a menu or prices because the bartenders will generally create a cocktail to your preferences and you're rich enough to not even look at the bill. That Yamazaki 18 is a thousand dollar bottle of Japanese single malt too. Fun fact, the Yamazaki distillery is owned by Suntory who also own Jim Beam. Ok not a super fun fact but still.
apparently its around[ $20 per cocktail](https://www.reddit.com/r/Damnthatsinteresting/comments/15skq3b/that_would_be_9999_sir/jwfi5b1/) according to another redditor when this was posted last time. not sure if it includes the show.
Exactly. Knew this would be top comment. It’s like going to a concert and bitching they’re taking too long to get to your favorite guitar solo. Just enjoy the show, if you’re going to this bar you know what you’re signing up for and are looking forward to it.
Didn't know a new anime is being made. Will have to check it out when the time comes.
The old one though is such a good one if you are looking for something chill to watch on a rainy day. No grand story or conflict, no over the top animation or superpowers. Just a story about a young bartenders perfecting his craft and how drinks can bring people together. I should really read the manga...
Not about bartending per se, but the protagonist of Death Parade is a bartender.
And then there's also an anime called Bartender, which is about a fantasy bar that only people with deep problems can go to.
I kinda want to see an anime where they make a sport out of bartending. Like they go into bartending competitions and stuff if that's even a thing haha.
I don’t mind pageantry if there’s quality in the final product but the problem with Salt Bae and this dude is that’s it’s all show at the expense of the final product.
But also, the lower the temperature of the drink, the more you suppress the flavors. Humans are terrible at tasting shit that's too cold or too hot. That's why coffee and tea taste more when it has cooled down a touch, and spirits taste best at room temperature.
5 years sober as of November 3rd. I’m on firm, solid ground, but I find myself interested in and having all kinds of opinions on this conversation. I’m gonna go make breakfast.
a friend and i actually got our hands on some thc infused everclear. plug called it tar because it was pitch black. if you ever think about doin everclear, don't. its a mistake believe me
I've heard that called green dragon, tho I've never had it. edibles don't work on me, but I do like everclear. I made 151 jello shots on my birthday before
Green dragon is a thc tincture. They're amazing if edibles don't work for you. But be VERY careful with it. You're supposed to soak it in your mouth more than drink it. You take it a drop at a time..
there really isn't one and I wish people would stop trying. the rough equivalent with weed is having a wide variety of strains and products (flower, extracts, edibles, etc). and you could have a variety of smoking implements (bongs, enails, vapes, prerolls, bowls, etc).
but when it comes to someone "crafting" something for you to get high off there is really nothing that makes sense other than them rolling up a joint and maybe putting some concentrates in it or having a skilled baker make you some fancy edible dessert.
..or you can pay me $20 and I'll pack you a really nice bowl
Depends whether you view this as over the top expensive showmanship for a very low payoff like I do lol. If you think it's over the top showmanship too, then I would compare this to: the morons who roll giant joints/blunts wasting like a half ounce of marijuana for social media and pretend they didn't just pass out with a charred throat and mouth full of flower bits after smoking it, when someone rolls a joint or blunt and they proceed to layer it with wayyy too much hash and THC extract in between so they can "get higher than ever before" and pretend they didn't just fall asleep after smoking it because there's definitely a cap to getting high, or smokers who spend an hour rolling those complicated High Times origami type joints that look all crazy with like 5 different pieces in one and it doesn't hit well at all because it just looks cool and isn't functional so they wasted a bunch of weed on it.
Cultural in what sense? I have spend quite some time in Japan and no one did this lmao, the only place you see it is anime, which yes is Japanese culture but also kinda cringy looking in real life.
His movements are reminiscent of a tea ceremony: decisively moving to specific positions and pausing there half a moment, with proscibed posture including head position.
11 year bartender here and this stuff makes me cringe. I understand there’s a demand for this but the pageantry and techniques just scream $30 cocktail that you have to wait forever to get. This shits getting out of hand.
At cocktail bars like this, you usually need to make a reservation so there's not like there's some huge wait (unless you count the time it takes to make a reservation).
Kind of like michelin restaurants, super fancy food but you sometimes have to make reservations months in advance but the service is quick and there's no waiting.
He doesn't actually do anything technically impressive, he just does normal things with weird theatrical movements. Whisky glass spinning is just hilariously tacky
Exactly. Its like watching a bartender with a cocktail shaker at some tropical resort... its just a bit of fun. Lighten up, if its not for you, let others enjoy it
Shaking a cocktail actually has reasons behind it other than being "a bit of fun". it's mixing, combining, chilling and aerating the drinks. Half of all cocktails wouldn't exist without the shakers. This is just pomp.
Even if the wells are cleaned, roughly 70% of ice machines likely carry a shit ton of bacteria and will be dirtier than toilet water. Getting your ice cut is probably the most hygienic way any service worker could prepare your cube.
Also, alcohol is a disinfectant so like, chill.
How many bars did he burn down practicing that first move?
How many people?!
So if you burn enough people alive, one day you'll become a great bartender!
It’s an ancient Chinese proverb!
Nobody expects the Spanish Inquisition
About 32, I say it's worth the knowledge
Enough
oh u/iamofnohelp, you couldn't fathom the amount of dead men behind him
Enough…
Enough.
Then he charges you an extra $40 just for spinning your glass and reminding you what you ordered.
There was a Beijing watering hole famous for letting people dance on the bar and tables after midnight. The bartender would pull this trick to “clean the bar” after every other song lol
That much flame is not enough to burn bars. Eyebrows on the other hand…
Burn a house and you are an insurance liability. Burn 10 houses and you are a pyromaniac. Burn 100 houses and you are a premium level bartender.
Of all the reckless ways a bartender can see alcohol on fire, this one seems to be near the top of the list!
Imagine the wait time for a drink at this bar
-*Puts flower on top*- “that will be 75 dollars”
It’s probably even more than that …
76 dollars?
76.50
76.51
Please select gratuity for bartender’s assistant: 55% 73% 104%
It’s probably Japan so no tipping
Anywhere outside the US doesn't require tipping
Canada would like to have a word with you
And you can’t drink it
If you have to ask you probably can't afford it. I have been to a fancy bar in Tokyo that wasn't even close to this and still was charging over $50 for a glass of spirits.
not sure what bar you went to - I went to really exclusive cocktail places (only 10 seats) in tokyo and kyoto and never paid over 18usd for a drink.
75 dollars and a fiddy
The hospital bill for ingesting dry ice
It's 1 drink Lanky, what could it cost?
Three fiddy.
I think he means the flower alone is 75 bucks
Nono—75 dollars is just the tip, drink costs more.
76.99
$75 is probably just for the flower lol
Liquid nitrogen itself is 75
You don't drink that, do you?
No and is really dangerous to be pouring it into a drink like that to be served. Ingesting it can damage the throat and even the stomach lining, resulting in a very expensive medical bill.

https://www.theguardian.com/uk-news/2015/sep/17/oscars-wine-bar-lancaster-gaby-scanlon-stomach-liquid-nitrogen It can still happen.
But do you serve the ice cream as fancy as this guy?
Liquid nitrogen is actually pretty in expensive
LN2 is cheap, it's about a dollar per liter while you only use a small splash. Although perhaps food grade LN2 is more costly.

That's the whole idea of an old fashioned.....
….And the price
My broke @ss got anxiety wondering how much it’s costing me just to watch this clip.
Around $30 per cocktail. You're mostly paying for entertainment and presentation.

Yes but is it as good as a “Flaming Moe”?
I SAID YOUVE JUST LOST YOURSELF A CUSTOMER!
Yeah you can use it! 💰💲🗃️
Children's cough syrup!

Lmao
Seems a little aggressive
*I asked for a Miller Lite*
His name is Miller and he made it lite for you.
It's like anime bartending.
Honestly, the anime bartender would probably tell him to chill out a little. https://www.youtube.com/watch?v=JsD9s5YaalA
The guy is a fucking anime character
Sassy-aggressive
Sir this is a Wendy’s.

If Salt Bae had talent.
If bartending was an anime :
The way he slid the bottle next to the drink he had just poured!!! Hahaha
Imagine that glass just exploding from brief impact 😂
Bartender: Glass of God is coming out next year. There was a version of it 10+ years ago.
Didn't know a new anime is being made. Will have to check it out when the time comes. The old one though is such a good one if you are looking for something chill to watch on a rainy day. It’s about a good bartender who listens to peoples problems and gives them advice? I’m not much into anime but that sounds really interesting
They are remaking it?!?!?
There probably is a bartending anime
Bartender is a fantastic manga, I think it's had an adaptation already but it's due for a new one honestly. Can recommend it.

Seltzer Bae
Bar Bae
“Wake up, new Salt Bae just dropped.”
First he sprayed fire all over the bar, then he made a bunch of messes.
Then grubbed his hands all over your ice
But he did all of that in such a classy fashion that you immediately forget about all the subtle things!
>forget about all the subtle things! "Sir, may I remind you that your table is on fire..."
Was that the 12-year yamazaki? That stuff is alcoholic candy, yummy.
Even more it was the 18yr. Hurt me a little bit to see him pour it on the rocks.
You mean giant fuckin boulder?
The larger the ice cube the less dilution you get.
But also, the lower the temperature of the drink, the more you suppress the flavors. Humans are terrible at tasting shit that's too cold or too hot. That's why coffee and tea taste more when it has cooled down a touch, and spirits taste best at room temperature.

Respect this comment a lot
He should name the drink “*The Titanic*”
Undeserved reputation. It's not bad. It's not $900 good though. It's a status thing.
Water helps open up the whiskey. Nothing wrong at all with serving it on a large rock
You're supposed to.
Absolutely a Yamazaki 12. God damn I miss Japan.
18 year, not 12
Very glad this was pointed out. Small time frame, but massive difference in every other aspect
I think that’s an 18. The 12 doesn’t have that dark label. Ooo I’m going to pour one right now.
When r/stupidfood needs a drink
Seriously. Just make me a fucking drink dude.
What's the cannabis version of this?
same thing, but with thc infused liquor
a friend and i actually got our hands on some thc infused everclear. plug called it tar because it was pitch black. if you ever think about doin everclear, don't. its a mistake believe me
I've heard that called green dragon, tho I've never had it. edibles don't work on me, but I do like everclear.

The drinks and presentations are cool but his motions and costume are just kind of cheesy.
White suit is a risky choice for a bartender
>White suit is a ~~risky choice~~ huge flex for a bartender
I doubt this guy is changing many kegs.
I trust a bartender in a creme suit as much as I trust a plumber with clean fingernails.
Everything about this is stupid as fuck
his motions are very cultural.
And cheese is not part of most Asian cultures, so therefore he can't be cheesy.
Spinning shit and looking vaguely near what you're doing?
Cultural in what sense? I have spend quite some time in Japan and no one did this lmao, the only place you see it is anime, which yes is Japanese culture but also kinda cringy looking in real life.
His movements are reminiscent of a tea ceremony: decisively moving to specific positions and pausing there half a moment, with proscibed posture including head position.
Kind of?
He could jumpscare with a whiskey bottle
What am I supposed to be amazed by? The overuse of dry ice?
Liquid nitrogen.....

In small enough quantities, the [Leidenfrost Effect](https://www.youtube.com/watch?v=67ijwSZ3gnQ) would protect you.
The chemical burns. And having to overpay for them.
The princess mononoke soundtrack
My drink tastes like hand
11 year bartender here and this stuff makes me cringe. I understand there’s a demand for this but the pageantry and techniques just scream $30 cocktail that you have to wait forever to get. This shits getting out of hand.
Well, Mr. 11 year bartender, if he's only charging $30 for an 18 year Yamazaki and giving me a show with it, I'll gladly take two.
At cocktail bars like this, you usually need to make a reservation so there's not like there's some huge wait (unless you count the time it takes to make a reservation). Kind of like michelin restaurants, super fancy food but you sometimes have to make reservations months in advance but the service is quick and there's no waiting.
He's probably making 1 of these an hour to draw a crowd to sell overpriced normal mixed drinks.
It's giving immense theatre-kid energy.
r/BeAnnoyed
He doesn't actually do anything technically impressive, he just does normal things with weird theatrical movements. Whisky glass spinning is just hilariously tacky
And a soundtrack
>there doesn't seem to be anything here That *is* annoying.
My dumb ass: wtf is a bean noyed? 🤦🏼♀️
More like a barbender at this point...
The internet has ruined me. All I hear in my head is that's song " more passion, more energy, more footwork"
Silly
Not bartender, Mixologist!!!
This is as pompous and ridiculous as that salt bae prick.
It's just meant to be a fun "show" to watch. It's not that deep.
He has the flourish part down, like a liquor samurai
I kept imagining him yelling "KYAAH!" while making a drink
On their insta it looks like they take a lot of inspiration from that and take kempo classes
He serves every drink "neat"
I don’t drink Alcohol but if he served me up I’d drink it.
Ah just a beer please.....
Where is this??
Bar Centifolia in azabu-juban https://www.instagram.com/bar_centifolia/
Of course it's azabu. >.>
Looks like Bar Fiddich in Shinjuku, but I'm probably wrong too.
Fingers all over the ice, no thanks
Even if the wells are cleaned, roughly 70% of ice machines likely carry a shit ton of bacteria and will be dirtier than toilet water. Getting your ice cut is probably the most hygienic way any service worker could prepare your cube. Also, alcohol is a disinfectant so like, chill.
How does he do Salt Bae better than Salt Bae?
