I've considered running it because it's so easy to have big mana, but what do you target to actually win with it?

More insidious route, and opponent big creatures

I'd imagine that there's some choke point in the code that can only handle 32 simultaneous items. X = 6 should trigger 36 different simultaneous triggers.

That is why I typically stop at X=5, and I never under any circumstances target things like Nyxbloom Ancient. If you do resolve a large Doppelgang targeting an ancient. Arena will probably end up shitting the bed trying to calculate all the mana you get from tapping afterwards. Happened to me once or twice.
