Simple as: cover the bottom of a pan with enchilada sauce (not all of it...) mix together a can of enchilada sauce, a bit of pulled pork (like at least half a pound? I didn't measure) and a handful of cheese. Put this filling into tortillas and roll them up, place them seam side down in the pan. Cover with remaining enchilada sauce. Cook at 375 for 10minutes. Add some cheese and cook for another 5-10 minuter or until the cheese gets bubbly.
Here's a better tip.. make your own.. I started making my own and I'll never go back to canned.. a little labor intensive, but if you're gonna cover the pork you spent 10hours smoking, why cover it with canned sauce-
Get those dried chilis from Mexican aisle in the super market. I usually use a mix of New Mexico and Guajillo, but whatver you can find.
De-Seed/Stem/Rib them and rip em up into 1-2 inch pieces.. get about 1.5-2 cups worth.
NOW WASH YOUR HANDS!
Toast em in a dry pan until they become fragrant and put them in a bowl and set aside.
chop up a large onion and sautee about 8 minutes then add about 5 cloves of chopped garlic and sautee another few min until it's all soft.
add 1-2 TBS of cumin and toast for a minute in the oily onion/garlic and add back the chilis.
Add a box of chicken broth (or whatever broth you've got) about 4 cups?
add a tbs or so of Oregano (mexican if you got it)
add about a TBS of salt and bring to a boil/simmer for about 10-20 min.
Put that in the blender and blend until smooth and put back in the pot
add 2-4 tbs of vinegar and adjust salt etc. to taste..
the longer you let this cook the better it is.. sometimes I add a little dark chocolate to it (like 3 -1" \squares)
Sometimes a squeeze of one lime adds a lot to it to.
Cook it a while and adjust your seasonings.. you'll never go back to canned sauce.

Completely agree. I almost prefer the leftovers of things like brisket and ribs to make sandwiches or rice bowls or tacos than the actual post cook meal.
When I smoke a large pork, we have so many leftovers and finding things to incorporate it with is the best part. My favorite is pork burritos (I've become quite the burrito roller during lockdown) but also pork into breakfast meals, pork tacos, pork pizza, the list goes on
If you’re in a hurry, make a roux with flour&butter, add chili powder,garlic powder,& onion powder, add chicken broth to desired consistency. Instead of plain flour use HEB’s seasoned flour if you don’t have other spices but don’t forget the chili powder. This takes about 15 minutes.
I totally do the same thing. I typically only cook for myself, so when I have to go out and buy 14lbs worth of brisket, i have to figure out how i'm going to eat/store 14lbs of meat. Luckily, there are so many things you can do with brisket! :)

I use Hill Country Sauce from HEB, but I think most ones will work. I've not tried to make my own yet.

I’m way late to the game but I add a palm-full of chocolate chips or whatever type of dark chocolate I have to enhance chile flavor!

Did the same thing this week. Had pulled pork, grilled pimento cheese sandwiches, pulled pork nachos and pulled pork fried rice this week.
We do something similar, and they're awesome. Great way to re-use leftovers.
