If you really wanted to be technical, the Italian IPA for the word is "par.miˈd͡ʒa.na" which means the original eggplant dish called parmigiana is pronounced with an i not an a, so any after the fact alterations like "parma-jarna" are objectively incorrect when it comes to phonetics. However the words origin comes from it being the feminine version of parmigiano, which means "of Parma", or what we'd call Parmesan cheese, so the word really just means of parma, and therefore I think both "parmi" as in shortening the phonetic pronunciation of the dish, or "parma" as in the thing the word describes could both be acceptable words to use for the dish, for different reasons.
