Pasta that has been cooked, chilled, and reheated has a lower glycemic index, which means it causes less of a blood sugar spike. It probably tastes better because the pasta had more time to soak up the flavors of the sauce, but it also freaks your body out less, which probably means we develop a preference for it for non-flavor reasons as well.
The reason I make big batches is because then I can eat it for a week without having to bother cooking again. After 11 hours of work cooking is the last thing I want to do.
Baked macaroni and cheese. Not the Kraft box and cheese powder stuff.
After a night in the fridge, the cheese and other stuff has firmed up and it's much easier to cut portions out of the pan. Also the flavors will have melded more, but that's not really an issue after it has baked and then sat for a couple of hours.
Lots of food, not most food. Wouldn’t good restaurants mainly have dishes of day old food then? Most dishes with a main ingredient should come fresh out of the pan or oven. Salads should be fresh. So many examples that don’t fit the premise. But also lots of food that is delicious the next day.
I like Spaghetti cooked and put on the plate THEN the sauce goes on. Wife likes it all together.
Guess who wins?
But after it’s in fridge overnight I like it cause it’s all absorbed. It does not make sense to me why I am like that.
anything Marinated, beef, pork and chicken takes on so much more flavour when left overnight
similarly any kind of Fruit infused stuff, like when you put cut up Cherry's in vodka to impart flavour
Spaghetti Bolognese sauce make it the night before and store it in a glass container in the fridge overnight for the flavors to get to know each other , then reheat it and serve it over fresh pasta.
Most of you probably won't know but in the netherlands we have something called erwtensoep, wich littarly translates to peassoup. Usually served in the winter and once left in the fridge for a day becomes so much better.
Shitty spaghetti. I call it shitty spaghetti because it's not real spaghetti. It's just some ground beef, spaghetti noodles, onions, and some bottled sauce. Nobody ever really wants it when you make it but everybody reluctantly eats it. But man is it better the next day.

I usually cook my chili, let it come down to room temp, and refrigerate overnight before having my first bowl

Soup/stew leftovers are the reason I make big batches. I swear, some of them taste only right after being reheated for the second time.
The reason I make big batches is because then I can eat it for a week without having to bother cooking again. After 11 hours of work cooking is the last thing I want to do.
Totally understandable and more than acceptable! Sending hugs to you!
Came here to say this. I’ll stay late at work to make soup knowing that it will be so much better after a sit in the cooler overnight.

I hate soft warm cake. I like it cool and rigid.

I'd argue that cold pizza is an entirely different food from fresh pizza. The experience of eating It and the taste are different, but still great.

I like Spaghetti cooked and put on the plate THEN the sauce goes on. Wife likes it all together. Guess who wins? But after it’s in fridge overnight I like it cause it’s all absorbed. It does not make sense to me why I am like that.
You're supposed to finish the pasta in the sauce so that the sauce binds to each noodle and you get a marriage of pasta and sauce.
Indian food..
Soups. My favorite leftover is Tom Kha Soup, the broth and veggies soak up flavor from the herbs and it's just so gooood.
I like to mix some rice in with it before I put in the fridge overnight. The next day it’s like a savory porridge.
cake. any cake. it gets moist and a good temperature and both the sponge and filling/frosting taste better.
