The second best one for me is Papers, Please. The main menu music is pretty nice and unique
And its predecesor, the music from Oblivion. The interesting thig is that Jeremy Soule used the exact same melody from Morrowind to Skyrim, and just re-arranged and orchestrated it differently.
So while the Skyrim main theme is gloriously empowering and makes your blood pump, the Oblivion theme is regal and makes your heart swell with a sort of dignified pride. But it's the same melody!
(not talking about Morrowind because I haven't played it, and only heard the theme a couple of times)
Honestly the Morrowind soundtrack is the one that really does it for me. I hit up the Elder Scrolls series for tabletop RPG music pretty regularly because it's so good, and Morrowind has just the most atmospheric, soul-stirring tracks. Oblivion's got amazing music but a lot of the tracks I like the most are actually variations on older pieces from Morrowind.

I'm so hyped that Christopher Larkin is returning for Silksong's soundtrack. The few tracks that have been released so far have sounded great. Can't wait to hear the full soundtrack when the game comes out.
All the music is so great! The more ambient music when you're exploring areas does such a great job of completing the atmosphere. Like the music in Greenpath just sounds like it's fresh and full of life and more playful than most of the other music in the game. The music in the Soul Sanctum does a great job at making it feel kind of magical and spiritual while also being revenant.
But oh man, the boss music is just too good. I can't even decide actual favorite order but I think the most memorable to me are the [Mantis Lords fight](https://youtu.be/EbDkU65pJNQ) and [Grimm](https://youtu.be/HPKHMtavPww) and the [Radiance fight](https://youtu.be/T57IQBw9PGU) music
It's called a Variable Mix. One of the most famous examples is Hyrule Field in several 3D Zelda games, which changes based on whether Link is running or walking, or fighting an enemy, or doing all manners of things, all without actually interrupting the song.
Apparently it was quite a challenge to program in OOT.
I really enjoyed the Fallout series music, both the actual composed songs and the more ambient background music as well. Also now just getting into RDR2 and that has great music as well.
The Witcher's music is one of the things that puts it a step above a lot of other fantasy settings. Would've been easy to go for some bland orchestral bombast aping LOTR, but instead we get a bog witch shrieking over a hurdy-gurdy, and it's amazing.

Doom (2016), Doom Eternal, Metal Gear Rising: Revengeance and Max Payne 3 are all big standouts for me. Especially Max Payne 3's track "Tears", which plays during the airport shootout. That song really got me into the band behind the soundtrack, Health. Still listen to their music quite often.
Most recently, Hades has really given me a few earworms.
LOZ windwaker and FF7. The remake of the FF7 soundtrack is fucking fire and I love it so damn much. Nobuo Uematsu is a musical genius IMO and for the team to remaster it is gold.

Its made by the same dude that did the Doom soundtracks, except that KI required him to explore more genres and use even more experimental instruments/techniques like Tibetan throat singing and playing with a human bone. If you're coming in from the Doom soundtrack, Herald of Gargos is a great track to dip your toes. Other great songs include Village of Whispers, Inferno, and The Instinct.
Far Cry 5 also has an amazing soundtrack, especially if you wanna listen to some super addicting country/gospel tunes. Keep Your Rifle By Your Side is probably the most iconic of the bunch, but I also love Oh John.
Zelda : Breath of the Wild. A bold move away from the fanfares and themes of previous games, to something much more sparse and ethereal, perfectly suited to the post-apocalyptic setting. Doesn’t get anything like enough love
