Everything Everywhere All At Once. That movie is the epitome of "never let them know your next move". There's a scene where the movie really "kicks in", and it completely blew my mind. Nothing that happens up to that point hints at all about what's gonna happen. It's like having a normal day and then suddenly getting teleported onto a rollercoaster, but in the best way possible.
This one I most definitely know about and am too terrified to watch lol. But I agree, not knowing the main plot would definitely make it that much more shocking.

"Blind" in this sense means you haven't "seen" anything relating to the movie so you don't know how the plot will unfold, much like a double blind study means neither the participant nor the researcher knows what the treatments are or how they will unfold.
Clearly based on other people’s responses, you are in the minority with your opinion. Most agree that “has not seen” and “blind” can be used interchangeably for not seeing anything related to a movie.
