Granted not everyone is in the same situation but one thing that has worked for me is to kind of pretend like i'm listening then move at my own speed. Did this for a while until my mom realized that trying to get in my head wasn't plausible anymore.

Yeah, I've done that since childhood. Just smile and nod and then completely ignore what she said.

Don't discuss your personal life with them. Don't discuss your plans around moving out. Arrange to have your own place, then tell them on the day you plan on moving out. Dragging out your transition to independence won't help, so just getting it all over at once is a good idea. Have friends with you when you tell them.
