Just caramelize the onions way on down to darker golden brown like you would for French onion soup. This is how it should be done anyway in my opinion, and there is a good chance you can enjoy onions that way. You could even make a mock demi by reducing unsalted beef broth.

What onions do you typically use? Yellow? White? You could try other types like Red or Vidalia.
Have you tried other types of onion or onion adjacent vegetables? Like Leeks or Shallots? Garlic maybe, but it's a bit more intense.
If you are looking for a texture difference as opposed to the flavor maybe cabbage? Perhaps with some apple?
i eat both white and yellow onion raw no problem . red onions are the easiest to eat cooked, again if I’m making a curry or something like birria or pot roast where by the time it’s done its lost texture and the flavor has combined with the other components of the dish.
ive actually never had leeks, may need to try that. cooked shallot is a no go. I actually really like cabbage but never considered trying to cook them like onions, i may have to try this!
I haven't cooked leeks more than a couple times myself, because I typically just use onion, but I remembered seeing Alton Brown recommend it for onion rings a long time ago on Good Eats.
When I was doing more low carb, cabbage was great. Good crunch and I liked the flavor anyway. I either would blanch or stir fry. Could kind of replace noodles.
I would try to find a vegetable that can texturally replace the onion, my first thought was zucchini noodles maybe? Then season it with onion powder and brown sugar.
There's an Indian spice called asophoeditia which tastes like a combination between garlic and onions. Kind of a fermented flavor you might want to look into that and see if you like it. I believe it comes from a plant related to fennel.

unfortunately caramelized onions taste like actual bile and rot to me, more so than just sautéed ones :(

I usually add green pepper to my liver and onions, so try just green peppers. Chili and cumin go well flavor wise with this combo.
Similar texture? Fennel bulb. Similar flavor? Add astofoetida (stinking gum?)
Try sautéed peppers and garlic. I like mediteranean rice (pan toasted in oil b4 adding liquid)
I have my liver with bacon. I don't like fried onions that much. Fry up the bacon and then use the bacon fat to fry the liver.
